Nine simple “salads” to prep for the week!

Well there’s nothing new here that you all know I love my prepped “salads” for the week! I think they make for the best thing to prepare for the week as a healthy lunch and are super versatile! Since by now I’ve shared a few of these, I thought I would do a roundup for you so you can have them all in one place. Choose one that you want to make this week and share with me how you are eating it throughout the week!

Some of my favorite ways to use these salads without just eating it by itself are:

  • Bed of greens and make it more into a “salad”
  • On an english muffin
  • In a wrap
  • On sweet potato toast
  • With crackers and fruit
  • Made into a “melt” with cheese on top

Not only are these salads super versatile in how you can use them so that you never get sick of it, but they make enough for the whole family or just to prep for the week! I’m all about a lunch that’s already ready for you. With these, just pull it out of the fridge when you’re ready to eat and top it however you like it.
