Shrimp Rice Bowls with Spicy Mayo
Talk about a lot of flavors! These Shrimp Rice Bowls with Spicy Mayo are full of flavor, so satisfying and perfect for an easy meal during the week. I love to meal prep some of these ingredients so I can throw together this meal for lunch or dinner!
I love having meals that I can always fall back on when I don’t know what to make. Having a few ingredients on hand that you know can create a simple meal are a great way to make sure you always have a balanced, nourishing meal at all times. Two of my staples to keep in the freezer are frozen rice and frozen shrimp. I get both of mine at Trader Joe’s! These are both a great carbohydrate and protein source to have for meals during the week.
What you need for Shrimp Rice Bowls:
Shrimp: I used the frozen Argentinian shrimp from Trader Joe’s! I love picking up a bag of these every time I’m there.
Shredded carrots: These are great to keep in the fridge to top on bowls or salads.
Cucumber: A little fresh cucumber is a fresh and delicious addition to these bowls.
Pickled onions: I love making a batch of these every week. They are great to add to salads, bowls or on toast.
Jasmine Rice: I used frozen jasmine rice to keep this even simpler! You can use any rice that you prefer in this bowl.
Fresh herbs: I used cilantro and parsley but you can add green onion or even basil too!
Olive oil: A good quality olive oil is great to use to sauté the shrimp.
Sea salt, pepper
What you need for spicy mayo sauce:
- Avocado Oil Mayo
- Sriracha
- Lemon juice
- Honey
- Sea salt
How to meal prep these Shrimp Rice Bowls:
These Shrimp Rice Bowls are great to meal prep at the beginning of the week. You can prepare and chop most of the ingredients so when you go to assemble it only takes a few minutes! I would prepare the jasmine rice (or any rice that you would like to use for these), chop up the cucumber and prepare the pickled onions. It would also be helpful to prepare the spicy mayo sauce and store it in the fridge for the week too. Depending on how much time you’ll have during the week, you can go ahead and sauté the shrimp but I prefer to have those prepared on the day I eat them!
Is jasmine rice healthy?
Jasmine rice is packed with phytonutrients which can help your body’s immune system and overall health. It’s also a great source of folic acid. Brown and White Jasmine Rice are a great source of fiber which is a great addition to your plate.
How to make pickled onions:
Pickled onions add the best flavor to everything, but especially to this burger bowl! Start by chopping up the red onion in half and then into some thin “C” slices. Set aside to make the brine. Take 6oz of water and set to a boil on the stove. Put in 1 tbsp salt with 1 tbsp white sugar into the mason jar with red onion. Pour in the boiled water and then fill the rest of the jar with white vinegar. Place lid on mason jar and give it a spin to let onions soak it up. Store in the fridge for the week!
What else can I use as a sauce for these Shrimp Rice Bowls:
If you don’t want to make the Spicy Mayo for this recipe or want to make it dairy free, you can top it with a drizzle of sriracha or chili onion crunch to still give it a kick!

Shrimp Rice Bowls with Spicy Mayo
These shrimp rice bowls are great for an easy weeknight dinner or lunch! The spicy mayo is so delicious to drizzle on top. Made with simple ingredients that can easily be prepped ahead of time.
Ingredients
- 7 frozen shrimp
- 1/2 cup jasmine rice
- 1/4 cup pickled onions
- 1/4 cup shredded carrots
- 1/4 cup cucumber
- 1 tbsp fresh cilantro
- 1 tbsp fresh parsley
- 1 tbsp olive oil
- 1/2 tsp sea salt, pepper
- Spicy Mayo:
- 1/4 cup mayo
- 1 1/2 tbsp sriracha
- 1/2 lemon, juiced
- 1 tsp honey
- 1/4 tsp sea salt
Instructions
- Saute your shrimp by adding olive oil to a pan to heat up. Add shrimp and top with salt and pepper. Cook until shrimp are fully cooked through.
- Prepare jasmine rice accordingly. *I used a frozen rice to reheat!
- Make your spicy mayo by combining mayo, sriracha, honey, lemon and sea salt in a small bowl. Mix together to combine. Set aside.
- In a bowl, add jasmine rice, carrots, cucumber, pickled onions and sauteed shrimp.
- Top with fresh herbs like cilantro and parsley.
- Drizzle with spicy mayo sauce.
- Enjoy!
