Ground Chipotle Chicken Baked Tacos

I’ve been loving making baked tacos for an easy weeknight dinner. I’ve also been loving finding different ways to switch them up too! These Ground Chipotle Chicken Baked Tacos pack in a flavor punch and are so good for a simple meal!

Ground Chipotle Chicken Baked Tacos

If you haven’t had a baked taco, now is your time to try it! I love these for easy dinners and typically they are a crowd pleaser too. If I don’t know what to make, I typically turn to these for something easy and satisfying. I wanted to make a ground chicken version as another protein option to fill these baked tacos with. I will say, the chipotle sauce adds a kick to these! You can tone down the kick by adding less peppers to the sauce, but if you enjoy the heat then definitely give it a go!

These baked tacos are also a great option to reheat the next day for leftovers too. I had these for a couple days reheated for lunch and it continued to hit the spot!

What you need to make Ground Chipotle Chicken Baked tacos:

  • Ground Chicken
  • Corn Tortillas
  • Refried Beans
  • Chipotle Peppers
  • Yellow Onion
  • Garlic cloves
  • Shredded Monterey Jack Cheese
  • Chicken broth
  • Extra Virgin Olive Oil
  • Avocado oil spray
  • Lime
  • Honey
  • Smoked paprika
  • Black Pepper
  • Cumin
  • Oregano
  • Sea Salt

WHAT YOU NEED FOR CHIPOTLE CREMA:

  • Mayo
  • Plain Greek Yogurt
  • Chipotle Peppers
  • Lime
  • Honey

how to make these tacos:

  1. Preheat oven to 375 degrees.
  2. Prepare chipotle sauce by combining chipotle peppers, chipotle, honey, lime, water and salt to a blender. Blend to combine.
  3. In a pan, heat up olive oil. Add minced garlic and onion to pan to saute.
  4. Add in ground chicken, chicken broth and seasonings. Mix to combine.
  5. Pour in chipotle sauce and mix. Bring to a light boil and then reduce to a simmer so the sauce can thicken up.
  6. Place tortillas on a baking sheet. Place in the oven for 3 minutes to lightly heat. **be sure to do this so they don’t break when you bake them!
  7. Heat up refried beans.
  8. Add 2 tbsp refried beans, chipotle chicken and shredded cheese to one side of the tortillas. Flip over so cheese side is down. This ensures they stick!
  9. Spray with avocado oil spray or lightly brush with olive oil.
  10. Place in the oven for 15 minutes. Broil for 2-3 minutes.
  11. While tacos are in the oven, make chipotle crema by combining mayo, plain greek yogurt, chipotle peppers, lime and honey. Blend together to combine.
  12. Once tacos are done, top with fresh cilantro and drizzle with chipotle crema. Serve with more on the side.
  13. Enjoy!

how to store your leftovers:

It’s best to store any leftovers in a sealed container in the fridge. I like using these!

If you want to switch it up, try doing this instead:

  • Use your favorite corn tortilla!
  • Try it with ground turkey or shredded chicken instead
  • Switch up the shredded cheese to shredded mexican or pepperjack!

Can I use ground turkey instead?

Yes! You can easily sub the ground chicken for ground turkey instead.

Do I have to use corn tortillas?

I think corn tortillas work best here! You could also make a larger size taco and use the Siete Almond Flour tortillas.

How do I prevent the tortillas from breaking?

It’s a must that the tortillas are warm before adding in the filling! Otherwise they will break when baked. I add them to the oven for 3 minutes after it has preheated.

Ingredients

  • 1 lb ground chicken
  • 8 corn tortillas
  • 1 cup refried beans
  • 1 cup yellow onion, diced
  • 2 garlic cloves, minced
  • 1/4 cup chicken broth
  • 1 1/2 cups shredded monterey jack cheese
  • 1 tbsp extra virgin olive oil
  • 3 tbsp chipotle peppers
  • 1 tbsp chipotle sauce, from can
  • 1 tsp honey
  • 1/2 lime, juiced
  • 1 tbsp water
  • 1/2 tsp smoked paprika
