Ground Beef and bean baked tacos

I’ve got your new favorite weeknight dinner covered! These Ground Beef and Bean Baked Tacos don’t get any easier and they are so delicious! If you need a meal ready in less than 30, these are for you! Plus, I guarantee everyone will love them! Pair it with the creamy jalapeño sauce for a delicious addition!

I’m always looking for meals that I can count on when I’m in a pinch around dinner time. When this happens, I want meals that are not only quick but taste delicious and made with a few simple ingredients. That’s where these Ground Beef and Bean Baked Tacos come in. Not only are they so easy to make, but this is surely going to please everyone! If you’re not making these for an easy dinner, maybe try for a gameday snack! These are easy to pick up and eat without even needing to have them pulled together for a dinner.

I like to pair mine with my creamy jalapeño sauce! If you haven’t tried this yet, it’s a must!! Once you have it ready, you can use it to top on bowls, eggs, toast–so many options! I personally love to put it on the Chicken Apple Sausage Sheetpan Dinner on the blog.

What you need for Ground Beef and Bean Baked Tacos:

  • Ground Beef
  • Refried Beans
  • Shredded Mexican Cheese
  • Yellow Onion
  • Garlic cloves
  • Taco Seasoning
  • Beef Broth
  • White Corn Tortillas
  • Sea Salt
  • Avocado Oil Spray
  • Cilantro
  • Extra Virgin Olive Oil
  • Optional: sour cream

For the creamy jalapeño sauce:

  • Roasted Jalapeño
  • Cilantro
  • Garlic cloves
  • Plain Greek Yogurt
  • Extra Virgin Olive Oil
  • Lime juice
  • Sea salt

How to make these tacos:

  1. Preheat oven to 375 degrees.
  2. In a heated pan, add olive oil, minced garlic and yellow onion. Sauté.
  3. Add in ground beef to brown. Pour in package of taco seasoning, sea salt and beef broth. Mix to combine. Once beef has cooked, set aside.
  4. Heat up corn tortillas in the microwave for 10 seconds **do this so they are easy to fold.
  5. Lay out corn tortillas on sheetpan.
  6. Add refried beans to one side of corn tortilla. Do this to all tortillas until you use up all of the refried beans.
  7. Add ground beef on top of refried beans to only cover one side. Sprinkle shredded mexican cheese to cover beef and other side of tortilla. Lay tortilla down so it is on the cheese side.
  8. Spray lightly with avocado oil spray.
  9. Place in the oven to bake for 15 minutes. Broil for 2-3 minutes.
  10. Make creamy jalapeño sauce by combining all ingredients in the blender. Blend.
  11. Remove from the oven and top with fresh cilantro. Serve with sour cream and creamy jalapeño sauce.

How to store your leftovers:

It’s best to store any leftovers in a sealed container! I like using these for easy fridge storage.

If you want to switch it up, try doing this instead:

  • Use your favorite tortillas!
  • Dip in ranch, salsa or any of your favorite sauces!
  • Use ground turkey or ground chicken!

Are these good to reheat?

Yes! I like to put mine back in the oven to reheat at 350 degrees for 10 minutes or so until they are warm.

Do I have to use ground beef?

No! You can switch this up by using ground turkey or ground chicken too.

Can I use a different tortilla?

Yes! I like to use this size of a tortilla but I’ve also tried these with the Siete Almond Flour Tortillas

What other sauces would you recommend?

Any salsa, green sauce or dipping sauce would be great with these!

These Ground Beef and Bean Baked Tacos make for an easy weeknight dinner that's packed with flavor and something everyone will love!

Ingredients

  • 1lb ground beef
  • 8 white corn tortillas
  • 3/4 cup refried beans
  • 1 cup shredded mexican cheese
  • 1 cup yellow onion, diced
  • 3 garlic cloves, minced
  • 1/4 cup beef broth
  • 1 (1.31oz) pkg taco seasoning
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp sea salt
  • 2 tbsp cilantro
  • Avocado Oil Spray
  • optional: sour cream
  • for creamy jalapeño sauce:
  • 1 jalapeño, roasted
  • 1/2 cup plain greek yogurt
  • 1 lime, juiced
  • 1 garlic clove
  • 1 cup cilantro
  • 3 tbsp olive oil
  • dash of sea salt
  • 2 tbsp water

Notes

Be sure to lay tortilla down on the cheese side. You will need the beans on one and cheese on the other to keep everything together!
