Honey Garlic Chicken Bowls

If you love a good bowl meal, you’ll love these Honey Garlic Chicken Bowls. Even better, the chicken is easily made in the crockpot so these are so simple to make! Plan to prep these ingredients for your next easy weeknight dinner. Plus, lunch leftovers the next day!

Honey Garlic Chicken Bowls

Now is the time for all the easy dinners with minimal prep! Honey Garlic Chicken comes together easily in the crockpot and cooks for 3-4 hrs on it own before you need to do anything else. The sauce is made with simple ingredients that you may already have in the fridge or pantry. It packs a ton of flavor that goes so well with the rice, pickled onions and edamame that I use in these bowls. I recently have been loving using chicken thighs in meals too. Chicken thighs seem to be relatively better prices at the store and they add more flavor then a chicken breast would. Try it out if you haven’t!

What you need for Honey Garlic Chicken Bowls:

  • Shredded Honey Garlic Chicken
  • Jasmine Rice
  • Shredded Carrots
  • Pickled onions
  • Edamame
  • Green Onion
  • Cilantro
  • Sesame Seeds

What you need for crockpot honey garlic chicken:

  • Chicken Thighs (Skinless and Boneless!)
  • Soy Sauce
  • Ketchup
  • Honey
  • Garlic Cloves
  • Rice Vinegar
  • Sriracha
  • Arrowroot powder
  • Sea salt

How to make these bowls:

  1. Add chicken thighs to the crockpot.
  2. Mix together honey garlic chicken sauce ingredients, leaving out the arrowroot powder. Pour into crockpot.
  3. Let it cook on high for 3-4 hours until chicken reaches an internal temperature of 165 degrees.
  4. Remove the chicken from the crockpot and turn the heat down to low.
  5. Shred the chicken thighs.
  6. In a small bowl, combine arrowroot powder with water. Mix to combine.
  7. Pour arrowroot and water mixture in the crockpot. Mix until sauce thickens.
  8. Add shredded chicken back to the crockpot to mix with sauce.
  9. Enjoy!

How to store your leftovers:

Storing your leftovers in sealed containers in the fridge is best! I like using these! If you’re prepping these bowls to reheat, be sure to add the fresh ingredients once you reheat.

If you want to switch these up, try doing this:

  • Use a different grain or rice! Brown rice or quinoa are great alternatives to switching these up.
  • Load up the veggies! If you want to add more veggies to this dish, try adding sautéed zucchini and squash.

How do I meal prep these bowls?

Prepping the crockpot honey garlic chicken will save a lot of time when you go to make these! I would also prep the rice or use frozen rice to quickly reheat (what I love to do!). All of the other ingredients are fresh and can easily be added on when you go to make it.

Do I have to use rice?

No! You can easily use any grain here or switch jasmine rice with brown rice. Quinoa is a great alternative grain to use.

How do you make pickled onions?

Pickled onions add the best flavor to everything, but especially to this burger bowl! Start by chopping up the red onion in half and then into some thin “C” slices. Set aside to make the brine. Take 6oz of water and set to a boil on the stove. Put in 1 tbsp salt with 1 tbsp white sugar into the mason jar with red onion. Pour in the boiled water and then fill the rest of the jar with white vinegar. Place lid on mason jar and give it a spin to let onions soak it up. Store in the fridge for the week!

These Honey Garlic Chicken Bowls are perfect to meal prep and packed with flavor! Made with just a few simple ingredients.

Ingredients

  • 1.5lb chicken thighs, boneless and skinless
  • 1 tbsp rice vinegar
  • 1 tsp sriracha
  • 3 garlic cloves, minced
  • 1/3 cup honey
  • 1/2 cup soy sauce
  • 1/4 cup ketchup
  • 1/4 tsp sea salt
  • 1 tbsp arrowroot powder (+ 2 tbsp water)
  • 1/2 cup jasmine rice
  • 1/4 cup shredded carrots
  • 1/3 cup edamame
  • 1/4 cup pickled onions
  • 1 tbsp cilantro
  • 1 tbsp green onion
  • sesame seeds

Instructions

  1. Add chicken thighs to the crockpot.
  2. Mix together honey garlic chicken sauce ingredients, leaving out the arrowroot powder. Pour into crockpot.

This crockpot chicken will make enough for 4+ servings. You will need to add more of the bowl ingredients if serving to more than 1 person.
