Grilled Corn and Zucchini Orzo Salad

The summertime salad you didn’t know you needed! This Grilled Corn and Zucchini Orzo Salad is simple to make and packs all the light and delicious flavors for a summer salad. Add this to your weekly meal prep or serve it as a side at your next cookout!

Grilled Corn and Zucchini Orzo Salad

Have we had enough summer salads yet? I know I haven’t! I’ve been loving orzo salads this year. It feels like a lighter option then pasta salad on some days and there are so many ways to switch it up! Plus, they are great to add to your meal prep, serve as a side for an easy weeknight dinner or take to a cookout! This Grilled Corn and Zucchini Orzo Salad will quickly become a favorite and surely will be a salad that everyone will enjoy!

Some ways that I like to serve this is as a side with a lunch wrap or sandwich, at dinner with chicken sausage or a burger, or take to a gathering and have amongst many other delicious dishes.

What you need for Grilled Corn and Zucchini Orzo Salad:

  • Orzo
  • Zucchini
  • Corn on the cob
  • Crumbled goat cheese
  • Basil
  • Extra Virgin Olive oil
  • Garlic clove
  • Honey
  • Lemon
  • Sea salt
  • Black pepper
  • Avocado Oil

How to make this salad:

  1. Cook orzo according to package. Set aside.
  2. Prepare grilled corn and zucchini using grill pan or outside grill. I like to use my grill pan! Rub avocado oil on corn and add to pan before placing the corn on.
  3. Once corn has been grilled whole, remove from the cob to get 1 ¼ cup corn.
  4. Add all dressing ingredients to a blender: basil, olive oil, lemon juice, honey, garlic clove, sea salt, pepper. Blend to combine.
  5. In a large bowl, add orzo, grilled corn, zucchini, fresh basil and goat cheese on top. Pour dressing in and mix to combine.
  6. Enjoy!

How to store your salad:

It’s best to store your salad in a sealed container in the fridge. I like using these for easy storage.

This Grilled Corn and Zucchini Orzo Salad is a summer must! The combination of grilled corn, orzo and a basil lemon vinaigrette makes this so delicious.

Ingredients

  • 2 cups orzo, cooked
  • 1 1/4 cup corn, about 2 corn on cob
  • 1 cup zucchini
  • 1/4 cup crumbled goat cheese
  • 1/2 cup + 2 tbsp fresh basil
  • 1 lemon, juiced
  • 1/4 cup extra virgin olive oil
  • 1 garlic clove
  • 1 tsp honey
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • Avocado oil
