I love finding ways to switch up dinners throughout the week while keeping them simple too. These Greek Chicken Orzo Bowls is a great way to add a healthy, delicious meal into your weeknight rotation while still coming together easily too. I love the combination of greek flavors and the marinade for these chicken thighs add a great addition too!

This meal is packed with protein, perfect to meal prep and a healthy meal that everyone will enjoy.

What you need for Greek Chicken Orzo Bowls:

  • Chicken Thighs
  • Orzo
  • Kalamata Olives
  • Tomatoes
  • Cucumber
  • Feta Cheese
  • Fresh Parsley
  • Tzatziki

What you need for the chicken marinade:

  • Plain Greek Yogurt
  • Extra Virgin Olive Oil
  • Red Wine Vinegar
  • Lemon
  • Sea Salt
  • Black Pepper
  • Oregano
  • Parsley

How to make these bowls:

  1. Start by preparing the marinade. Add chicken thighs to a large bag or container and mix with marinade to completely coat. Place in the fridge for no longer than 2 hours.
  2. Prepare orzo according to package.
  3. In a heated cast iron, cook chicken until it reaches an internal temperature of 165 degrees. Let sit for a few minutes.
  4. Chop up ingredients: cucumber, tomatoes and olives.
  5. Assemble bowls with orzo, cucumber, tomato, olives and chicken thighs.
  6. Top with fresh parsley, crumbled feta and tzatziki.
  7. Enjoy!

How to store your leftover orzo bowls:

It’s best to store any leftovers in a sealed container in the fridge! I like using these for easy storage in the fridge or if you’re packing it up to go with you, these containers are great!

If you want to switch this up, try doing this instead:

  • Use a different grain in these bowls like brown rice or quinoa.
  • Add your favorite hummus or make a homemade tzatziki!
  • Mix in your favorite greens like arugula.
