It’s pasta salad season and I’m here for all the pasta salad combinations! This Street Corn Pasta Salad is packed with flavor and perfect to serve up at your next cookout. This is great to prep for the week or serve alongside your favorite protein!

Street Corn Pasta Salad

I can’t get enough of pasta salads right now! They are the epitome of summer and I can’t wait to make many more for us over the next few weeks! This Street Corn Pasta Salad actually combines two of my favorites into one. It’s seriously sooo good! Everyone at your next cookout will be loving this salad. Plus, it’s so easy to make with many pantry staples that you may already have around!

Not only does pasta salad make for a delicious side, but it can easily be prepped for the week too. Pasta salad every day!? Count me in!! Add this to your lunch prep for the week too!

What you need for Street Corn Pasta Salad:

  • Pasta
  • Avocado Oil Mayo
  • Plain Greek Yogurt
  • Lime
  • Lime Zest
  • Jalapeño
  • Roasted Corn
  • Cilantro
  • Cotija cheese
  • Hot sauce
  • Garlic cloves
  • Cumin
  • Chili powder
  • Garlic powder
  • Cayenne
  • Sea salt

How to make this Pasta Salad:

  1. Finely chop jalapeño and cilantro for pasta salad. I like to use the frozen roasted corn from Trader Joe’s for this recipe so I just reheat to have ready!
  2. In a small bowl, mix together ingredients for the sauce: mayo, greek yogurt, lime, lime zest, garlic cloves, hot sauce, cumin, chili powder, garlic powder, cayenne and sea salt. Mix to combine.
  3. In a large bowl, add cooked pasta, cilantro, jalapeño, roasted corn and cotija cheese. Pour dressing on top. Mix to combine.
  4. To serve, top with additional cheese and cilantro. Enjoy!

How to store your leftover salad:

It’s best to store any leftovers in a sealed container in the fridge. I like using these for easy fridge storave!

If you want to switch this up, try doing this:

  • Add your favorite protein!
  • Mix in red onion for a little more crunch!
  • Serve it alongside your favorite protein
