The combination of the mediterranean flavors here and the light dressing makes this perfect to make right now! I think pasta salads are great to not only bring for a cookout but also prep for an easy lunch or side for the week too! This would be great to prep for lunches and serve with a wrap or any protein for a quick lunch!
This Mediterranean Pasta Salad takes less than 30 minutes to make, packed with flavor and perfect to make this time of year.
What you need for Mediterranean Pasta Salad:
- Bowtie Pasta
- Sun-dried Tomatoes
- Kalamata olives
- Canned Artichokes
- Crumbled Feta
- Cucumber
- Red Onion
- Extra Virgin Olive Oil
- Red Wine Vinegar
- Lemon
- Apple Cider Vinegar
- Sea salt
- Oregano
- Dried Rosemary
- Black Pepper
- Thyme
How to make this salad:
- Start by preparing your pasta.
- Chop up all ingredients: red onion, cucumber, artichokes, sun-dried tomatoes and olives.
- Mix together all ingredients for dressing in small jar: olive oil, red wine vinegar, lemon, apple cider vinegar, sea salt, oregano, dried rosemary, black pepper and thyme.
- Combine all ingredients into a large bowl and mix.
How to store your leftovers:
If you’re storing your pasta salad for the week, it’s best to store in a sealed container in the fridge! I like using these for easy storage. When packing it up to go with you for lunch, these containers are great for a lunchtime packed option.
If you want to switch this up, try doing this instead:
- Try using a different noodle or a chickpea pasta depending on preference!
- Add a protein like grilled chicken to mix in or any protein you like!

- 1/3 cup sundried tomatoes
- 1/2 cup red onion, slivered
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 lemon, juiced
- 1 tsp apple cider vinegar
- 1/4 tsp oregano
- 1/4 tsp thyme
- 1/4 tsp dried rosemary
- 1/2 tsp sea salt
- dash of black pepper
