This Trader Joe’s recipe is so simple and perfect for an easy weeknight dinner! It really doesn’t get any better than a meal that comes together in one sheetpan right?! This Chicken Sausage and Gnoochi Sheetpan will quickly become a weeknight staple.

Chicken Sausage and Gnocchi Sheetpan

I’m always looking for quick and easy meals to add to my weeknight dinner rotation. Even better when it all comes together in one pot or pan for minimal clean up too! I love Trader Joe’s for their easy, delicious options so I knew I had to make this recipe with two of my favorite and go-to items from there. The kale cashew pesto and chicken sausages are usually always in my cart!! Plus, I just discovered this gnocchi and love it for an alternative to a potato. This Chicken Sausage and Gnocchi Sheetpan combines some roasted summer vegetables with the gnocchi, chicken sausage and finished off mixed up with pesto and shredded cheese. It’s seriously so good!

I even did this recipe for lunch leftovers too which I love finding recipes that work for both! Add this sheetpan meal to your easy meal rotation this week!

What you need for Sausage And Gnocchi Sheetpan:

  • Zucchini
  • Yellow Squash
  • Garlic & Herb Chicken Sausage
  • Gnocchi
  • Tomatoes
  • Pesto
  • Parmesan cheese
  • Avocado Oil Spray
  • Sea Salt
  • Garlic Powder
  • Black Pepper

How to make this Sheetpan meal:

  1. Start by preheating the oven to 400 degrees.
  2. Chop up zucchini, yellow squash and chicken sausage.
  3. On a sheetpan, add gnocchi, squash, zucchini, chicken sausage and tomatoes.
  4. Spray with avocado oil spray to fully coat. Top with sea salt, black pepper and garlic powder.
  5. Place in the oven for 20 minutes. Mix up and place back in the oven for 10 minutes.
  6. Remove from the oven and add a couple tablespoons of pesto on top and mix together.
  7. Top with fresh parmesan cheese. Enjoy!!

How to store your leftovers:

It’s best to store your leftovers in a sealed container in the fridge. I like using these for easy fridge storage!

Do I have to use pesto?

No! If you want to mix this up with another sauce or leave it off, you can do that too. You can also make your own pesto if you prefer that too!

Can I use different veggies on this sheetpan?

Yes! You can add red onion, bell peppers or use all zucchini or squash here.

Would any kind of chicken sausage work?

Yes! You can use any chicken sausage that you like here.

This Chicken Sausage and Gnocchi Sheetpan is perfect for an easy weeknight dinner and made with just a few simple ingredients all from Trader Joe's!

Ingredients

  • 3 Garlic & Herb Chicken Sausages
  • 1 package (16oz) gnocchi
  • 1 cup zucchini
  • 1 cup yellow squash
  • 1 cup tomatoes
  • 1/3 cup grated parmesan cheese
  • 4-5 tbsp kale cashew pesto
  • 1/2 tsp sea salt
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • Avocado Oil Spray

Instructions

  1. Preheat oven to 400 degrees.
  2. Chop up zucchini, squash and chicken sausages.
  3. Place gnocchi, squash, zucchini, tomatoes and chicken sausage on the sheetpan. Coat with avocado oil spray to full coat.
  4. Top with sea salt, black pepper and garlic powder.
  5. Place in the oven to bake for 20 minutes.
  6. Flip around and place back in the oven for 10 minutes.
  7. Remove from the oven and add dollops of pesto. Mix together.
  8. Top with grated parmesan cheese.
  9. Enjoy!!
