One Pan Cajun Chicken Sausage and Rice

This time of year I’m looking for all of the easy meals! Who doesn’t love a meal that comes together in one pan too!? This One Pan Cajun Chicken Sausage and Rice is perfect for an easy weeknight dinner. Packed with flavor and so simple to make too!

One Pan Cajun Chicken Sausage and Rice

Do you ever get bored with dinner? I know I do! I also don’t want to spend a lot of time in the evenings making a meal. That’s where this super easy and delicious One Pan Cajun Chicken Sausage and Rice comes in! This has dinner ready in less than 30 minutes and makes enough for the whole family!

I was recently getting the cravings for all the cajun flavors but still wanted something simple! I know everyone in the One Balanced Life community loves quick and easy meals, so I hope this becomes a new dinner favorite for you!

What you need for One Pan Cajun Chicken Sausage and Rice:

  • Cajun Chicken Sausage
  • Green Bell Pepper
  • Red Bell Pepper
  • Yellow Onion
  • Garlic cloves
  • Chicken Broth
  • Cajun seasoning
  • Fire Roasted Tomatoes
  • Long Grain White Rice
  • Sea Salt
  • Black Pepper
  • Garlic powder
  • Extra Virgin Olive Oil
  • Cilantro

How to make this one pan meal:

  1. Start by chopping up all of your ingredients: bell pepper, yellow onion, garlic cloves and cajun chicken sausage.
  2. In your pan, add olive oil. Add minced garlic and onion. Saute.
  3. Add bell peppers and continue to saute.
  4. Mix in cajun seasoning, sea salt, black pepper and garlic powder.
  5. Once sauteed in the seasonings for 2-3 minutes, add the chicken sausage. Continue to saute for 3-4 minutes.
  6. Add rice and chicken broth. Mix together. Bring to a boil and reduce to a simmer.
  7. Set timer for 15 minutes and place top on dish.
  8. With 2 minutes left, add can of fire roasted tomatoes and stir.
  9. Broth should completely soak into rice in 15-17 minutes. Remove from the heat and let sit for 5 minutes off.
  10. Top with cilantro. Enjoy!!

If you want to switch it up, try doing this instead:

Use your favorite chicken sausage or andouille sausage. I used the Bilinski’s Cajun Sausage.

How to store your one pan meal leftovers:

It’s best to store any leftovers in a sealed container in the fridge. I like using these!

Can I use different rice?

I recommend using long grain white rice for this one because you want to use one that doesn’t take too long to cook! You could also try to sub it out for quinoa instead.

  • 14oz fire roasted tomatoes
  • 2 garlic cloves, minced
  • 1 tbsp extra virgin olive oil
  • 1.5 tbsp cajun seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 3 tbsp cilantro
  • optional: red pepper flakes
