I love a good chicken salad and this Street Corn Inspired Grilled Chicken Salad will quickly become a summer favorite. It’s simple to make and perfect to add to your meal prep routine for an easy lunch.

They are great to keep in the fridge for a simple lunch to quickly pull out and put in a wrap, toast or serve with crackers for something easy. This Street Corn Inspired Grilled Chicken Salad is perfect for summer! The combination of the roasted corn, creamy dressing and grilled chicken makes this so delicious. It also makes for a protein packed meal which is ideal for staying satisfied throughout the day.

What you need for Street Corn Inspired Grilled Chicken Salad:
- 1lb Chicken strips
- Roasted Corn
- Cilantro
- Jalapeño
- Red onion
- Cotija cheese
- Avocado Oil Mayo
- Plain Greek Yogurt
- Hot Sauce
- Chili powder
- Garlic powder
- Sea salt
- Black Pepper
- Avocado Oil Spray
How to make this salad:
- Season chicken with sea salt, black pepper and garlic powder. Spray avocado oil spray on grill pan.
- Start by grilling your chicken strips. I used this grill pan to make it easily cooking inside! Cook until chicken reaches an internal temperature of 165 degrees.
- Chop up red onion, cilantro and jalapeño.
- Mix together ingredients for dressing: avocado oil mayo, plain greek yogurt, hot sauce, chili powder, garlic powder, sea salt and black pepper.
- In a large bowl, combine chopped grilled chicken, roasted corn, jalapeño, cilantro, red onion and cotija cheese.
- Combine dressing to bowl and mix to combine.
- Serve and enjoy!!
How to store your leftover salad:
It’s best to store any leftovers in a sealed container in the fridge. I like using these for easy fridge storage! This salad will last in the fridge for up to 4 days in the fridge!

I don’t have an outside grill and I use my grill pan to get the same results of grilled chicken!! I love it. You can also substitute for shredded chicken but may want to adjust how much you use.

This Street Corn Inspired Grilled Chicken Salad is perfect for an easy summer lunch to have prepped and ready in the fridge!
Ingredients
- 1 lb chicken strips
- 1 cup roasted corn
- 3 tbsp cilantro
- 1 jalapeno, finely diced
- 1/2 cup red onion, diced
- 1/4 cup cotija cheese
- 1/4 cup avocado oil mayo
- 1/3 cup plain greek yogurt
- 1/2 tbsp hot sauce
- 1 tsp chili powder
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
Instructions
- Season chicken with 1/2 tsp sea salt, 1/4 tsp black pepper and 1/2 tsp garlic powder. Spray avocado oil spray on grill pan.
- Start by grilling your chicken strips. I used this grill pan to make it easily cooking inside! Cook until chicken reaches an internal temperature of 165 degrees.
- Chop up red onion, cilantro and jalapeño.
- Once chicken has finished cooking, remove and chop into smaller pieces.
- Mix together ingredients for dressing: avocado oil mayo, plain greek yogurt, hot sauce, chili powder, 1/2 tsp garlic powder, 1/2 tsp sea salt and 1/4 tsp black pepper.
- In a large bowl, combine chopped grilled chicken, roasted corn, jalapeño, cilantro, red onion and cotija cheese.
- Combine dressing to bowl and mix to combine.
- Serve and enjoy!!
