Dill Pickle Chicken Salad

Who doesn’t love a good chicken salad!? I know it’s one of my favorite things to have prepped and ready in the fridge for an easy lunch during the week. This Dill Pickle Chicken Salad has quickly become a favorite. Serve it on toast, with crackers or by itself for a simple meal!

If you’re looking for something to make for quick and easy lunches, you have to try prepping a chicken salad. Once you do, you’ll be hooked on having that ready for the week. What you need for Dill Pickle Chicken Salad:

  • Rotisserie Chicken
  • Dill Pickles
  • Celery
  • Dill Pickle Juice
  • Mayo
  • Plain greek yogurt
  • Garlic powder
  • Dried dill
  • Sea salt
  • Black Pepper

How to make this chicken salad:

  1. Start by shredding your rotisserie chicken.
  2. Finely chop up celery and dill pickle.
  3. In a small bowl, mix together ingredients for dressing: mayo, plain greek yogurt, dill powder, dill pickle juice, garlic powder, sea salt and black pepper
  4. In a large bowl, combine shredded chicken, celery and dill pickle. Add in dressing and mix to combine.
  5. Enjoy!!
