Shrimp Burrito Bowls
I’m always looking for new ways to enjoy some of my favorite foods and these Shrimp Burrito Bowls are one of those! Loaded with the delicious flavors of pickled onions, roasted corn, black beans and shrimp make these perfect for an easy and delicious weeknight dinner.
Weeknight dinners can get a little boring, don’t you think!? I want something that’s going to be quick and easy while also super satisfying and nutritious, but I don’t want to spend all evening making it! One reason why I love these Shrimp Burrito Bowls is how quick they come together and so easy too. They are also meal prep friendly, dairy free and packed with protein! A lot of these ingredients can be prepped ahead of time so it’s easy to assemble when the time comes or make this meal in less than 30 minutes for an easy dinner.
There are many ways to switch up these bowls with ingredients that you already have on hand or that you prefer. I picked up a lot of the ingredients at Trader Joe’s but also have many ways you can make this your own! Switch it up with brown rice or make the creamy sauce instead of a store bought one.
What you need for Shrimp Burrito Bowls:
- Frozen Shrimp (I like to use the Argentinian Shrimp from Trader Joe’s)
- Jasmine Rice
- Black Beans
- Tomatoes
- Pickled onions
- Cilantro
- Frozen Roasted Corn (I use the bag from Trader Joe’s!)
- Lime
- Cotija cheese
What you need for the sauteed shrimp:
- Paprika
- Chili powder
- Garlic Powder
- Cayenne
- Onion Powder
- Sea salt
- Black Pepper
- Extra Virgin Olive oil
Ingredients for creamy sauce:
- Avocado Oil Mayo
- Hot Sauce
- Lime
- Cumin
- Chili Powder
How to make burrito bowls:
- Start by preparing your shrimp. I use the frozen Argentinian shrimp from Trader Joe’s and like to defrost it before using.
- Mix together seasonings: chili powder, paprika, garlic powder, cayenne, onion powder, sea salt, black pepper.
- Combine shrimp and seasonings to mix.
- Add olive oil to pan. Place shrimp on the pan to saute. Cook on both sides until fully cooked through.
- Heat up jasmine rice in the microwave or cook according to package.
- Combine jasmine rice, cilantro and lime in a bowl and mix together. Set aside.
- Heat up roasted corn. I used the frozen roasted corn from Trader Joe’s. You can use any kind here!
- Prepare bowls by cilantro lime rice, roasted corn, black beans, tomatoes, sautéed shrimp, pickled onions and cilantro.
- Drizzle with sauce of choice. Enjoy!
How to store your leftover bowl ingredients:
If you choose to make these bowls ahead of time and store all of the ingredients together for easy grab and go meal prep or you can store them in separate containers to easily assemble when meal time comes around. I like to use these containers for a variety of sizes. If you want something that works for a grab and go meal, then these are great.
If you want to switch up these burrito bowls, try these options:
- Use a different protein like chicken, salmon or tofu.
- Try using cauliflower rice, quinoa or brown rice instead of the cilantro lime rice.
- Make your own sauce or drizzle your favorite sauce on top.
How to make pickled onions:
Pickled onions add the best flavor to everything, but especially to this burger bowl! Start by chopping up the red onion in half and then into some thin “C” slices. Set aside to make the brine. Take 6oz of water and set to a boil on the stove. Put in 1 tbsp salt with 1 tbsp white sugar into the mason jar with red onion. Pour in the boiled water and then fill the rest of the jar with white vinegar. Place lid on mason jar and give it a spin to let onions soak it up. Store in the fridge for the week!

FAQs:
While many of these ingredients can be prepped ahead of time, I’d recommend leaving the shrimp off until you plan to eat for maximum freshness. Try prepping the cilantro lime rice, pickled onions and sauce for easy assembly!
These shrimp burrito bowls make for a great balance of protein, carbohydrates and fat that make for a satisfying meal.
I like to use my cast iron skillet! I think it sautes the shrimp to perfection.

Shrimp Burrito Bowls
These Shrimp Burrito Bowls make for an easy weeknight dinner that's full of flavor. All the tastes of a burrito in a delicious bowl!
Ingredients
- 12-15 frozen shrimp, defrosted
- 10oz jasmine rice
- 1/2 cup black beans
- 1/2 cup roasted corn
- 1/2 cup pickled onions
- 1 lime, juiced
- 3 tbsp fresh cilantro (plus additional for top)
- 1 tbsp cotija cheese
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp black pepper
- 1/4 tsp sea salt
- dash of cayenne
- for the creamy sauce:
- 1/4 cup mayo
- 2 tsp hot sauce
- 1/4 tsp cumin
- 1/4 lime, juiced
- 1/2 tsp chili powder
Instructions
- Defrost shrimp
- Mix together seasonings: chili powder, paprika, garlic powder, cayenne, onion powder, sea salt, black pepper.
- In a small bowl, mix together seasonings with shrimp until fully coated.
- Add olive oil to cast iron skillet. Once heated up, add shrimp.
- Cook shrimp on both sides until cooked through. About 6 minutes.
- Heat up jasmine rice in the microwave or cook according to package.
- Prepare roasted corn. I used the frozen roasted corn from Trader Joe's. You can use any kind here!
- Drain and rinse black beans.
- Mix together jasmine rice, juice of 1 lime and cilantro. Set aside.
- Make creamy sauce by combinining ingredients or use your favorite store bought one.
- Prepare bowls by adding cilantro lime rice, roasted corn, black beans, tomatoes, sautéed shrimp, pickled onions, cotija cheesse and cilantro on top.
- Enjoy!
Notes
I used Trader Joe's Frozen Argentinian Shrimp, frozen Roasted Corn and frozen jasmine rice. Use what you like here!
All of these ingredients make enought for two bowls.
I recommend meal prepping your pickled onions ahead of time.
