BBQ Chicken Tostadas

BBQ chicken, melty cheese, crunchy tortillas..does it get any better!? These BBQ Chicken Tostadas make for a great option for lunch or dinner during the week! Plan to prep the BBQ Chicken at the beginning of the week and then you can easily assemble these when you want them. This simple combo will be one that everyone loves!

BBQ Chicken Tostadas

I love a good tostada for a simple meal or appetizer! They are so easy to make and the combo of something crispy with the ingredients on top is so delicious. While they do require a little bit of prep before to make the crockpot chicken, it’s something that can easily be prepped at the beginning of the week and you can assemble these another evening for dinner! I love just doing a batch of crockpot chicken and using it a variety of different ways.

These make for an easy weeknight meal or great to serve for a gameday crowd!

What you need for these tostadas:

  • Corn Tortillas
  • Chicken Breast
  • BBQ Sauce
  • Chicken Broth
  • Shredded Mozzarella Cheese
  • Refried Beans
  • Cilantro
  • Red onion
  • Sea Salt
  • Black Pepper
  • Garlic Powder
  • Onion Powder
  • Smoked Paprika

How to make these:

  1. Prepare BBQ chicken in the crockpot. Add chicken breast, chicken broth, bbq sauce and seasonings to the crockpot. Set for high for 4hrs or low for 6hrs. Shred with a fork once done.
  2. Preheat oven to 400 degrees.
  3. Lay your tortilla on a baking sheet and spray lightly with avocado oil spray.
  4. Place in the oven for 10 minutes, flipping half way through.
  5. Heat up refried beans on stovetop or in microwave.
  6. Add refried beans, shredded chicken and cheese to the tortilla.
  7. Place back in the oven for 3-4 minutes until cheese is melty.
  8. Top with cilantro, red onion and a drizzle of BBQ sauce.
  9. Enjoy!

How to store your leftovers:

While these are best to enjoy as soon as you make the crispy tortilla, you can prep a batch of crockpot BBQ Chicken to store in the fridge! I like using these for easy fridge storage.

If you want to switch these up, try doing this instead:

  • Try a different bbq sauce!
  • Use a shredded pepper jack cheese
  • Any corn tortilla that is your favorite will work great!

How do I make a tostada?

You can do this two ways! Either bake them in the oven at 400 degrees for 10 minutes (flipping half way through) or on the stovetop!
You want to make sure the pan is hot in order to get the right kind of tostada for this! Heat 1 tbsp olive oil in a pan on high heat and give it at least a couple minutes to heat up. Place the tortilla down (it should immediately start to crisp and sizzle in the pan). Flip tortilla on both sides until tortilla is crispy.

What BBQ sauce did you use?

I used a spicy BBQ sauce from a local Austin spot but you can use any bbq sauce you like here! This is also one I love to use.

  • 1.5lb chicken breast
  • 1.5 cups BBQ Sauce (additional to drizzle on top)
  • 1/3 cup chicken broth
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 3 corn tortillas
  • 1/2 cup refried beans
  • 1 cup shredded mozzarella cheese
  • 3 tbsp cilantro
  • 3 tbsp red onion, finely diced
  • Avocado Oil spray

Notes

If doing more chicken in the crockpot, you will need to add more bbq sauce and chicken broth.
