I’m excited to share more about New Zealand grass-fed meat through my partnership with Beef & Lamb New Zealand. Grass-fed and pasture-raised beef and lamb from New Zealand is not only delicious, it also packs a nutritional punch. Loaded with complete proteins, healthy fats, vitamins, minerals, and antioxidants, grass-fed beef and lamb from New Zealand provides unrivaled nutritional benefits. For example, did you know grass-fed red meat has higher vitamin A and E content and a favorable fat profile to grain-fed red meat? It also contains iron, zinc, protein and B12, which all play key roles in immunity, energy levels, focus and overall performance. No wonder they call it nature’s power pack!

Beyond the nutritional benefits, I also love New Zealand’s commitment to sustainable farming practices. Their farmers are dedicated to raising animals humanely while preserving biodiversity, reducing carbon emissions, and protecting water, soils and air. The methods they use nourish and regenerate soils, keep waterways running clear and help limit our impact on the environment and the climate. Can’t ask for more that hat!

How to make Barbacoa Grass-fed Beef Tostadas:

  1. Start by combining the beef chuck, beef broth, yellow onion, garlic, lime, sea salt, pepper, paprika, cumin, chili powder and onion powder in a slow cooker. (I use this one!) and cook on low for 6-8 hours.
  2. Begin to shred with fork once it has cooked for 5-6 hrs. Keep checking on it and cut into beef as it cooks!
  3. Prepare tostadas by preheating oven to 400 degrees. Spray avocado oil on both sides of corn tortilla. Place in the oven to bake for 5 minutes on each side.
  4. Prepare avocado tomato salsa by combining avocado, tomatoes, lime, red onion, sea salt and garlic powder in a small mixing bowl.
  5. Create tostadas by layering shredded barbacoa on crispy tortilla. Top with avocado tomato salsa. Sprinkle with grated cojita cheese, red pepper flakes and fresh cilantro.
  6. Enjoy!

Best way to store extra Barbacoa Beef:

This recipe makes a bunch of shredded barbacoa! Unless you’re feeding for a large group, you’ll likely have extra. Shredded barbacoa grass-fed beef will last up to a week in the fridge in a sealed container.

Other ways you can use shredded barbacoa grass-fed beef:

  • In tacos!
  • Quesadillas
  • On sliders
  • Mixed into a breakfast omelet
