Air Fried Coconut Shrimp

I’ve been loving all the shrimp recipes and this Air Fried Coconut Shrimp may be a new favorite! Plus, it’s crazy easy and who doesn’t love the air fryer!? It’s one of my favorite kitchen items and I use it ALL the time around here. I love this recipe because not only is it easy, but it has minimal ingredients with still a lot of flavor. Win-win.

Air Fried Coconut Shrimp

If you’re looking for a new flavorful appetizer or dinner, this Coconut Shrimp is great to make! Not only is so simple to make and made with just a couple of ingredients, but it’s great to to serve on top of greens or with a dipping sauce. This dish can take less than 20 minutes using your air fryer, which is a favorite in my kitchen!

What you need to make Coconut Shrimp:

  • Eggs
  • Unsweetened Fine shredded coconut
  • Almond Flour
  • Shrimp (I love the Argentinian shrimp from Trader joes!) frozen shrimp will work just make sure to thaw before using
  • Sea Salt
  • Garlic Powder
  • Paprika
  • Black Pepper
  • Optional: cilantro, red pepper flakes for garnish

How to make Air Fried Coconut Shrimp:

  1. Start by making three bowls. One with eggs whisked, almond flour with seasonings, and shredded coconut.
  2. Make sure to pat shrimp dry before beginning to coat.
  3. Dip your piece of shrimp into the egg mixture to fully coat and then roll in the flour mix. Then dip to completely coat in the coconut.
  4. Set aside and do the same thing for each shrimp.
  5. Place in the air fryer.

How to store coconut shrimp

If you want to pair this, try these ways:

  • With a delicious dipping sauce! I love sweet chili sauce, spicy cashew sauce or spicy mayo!
  • Put it on top of a bed of greens for a delicious protein on salad
  • Have it with a side of roasted veggies or more protein.

FAQs

Can I use frozen shrimp?

Yes! You can use frozen or raw shrimp here. Just be sure to let the frozen shrimp thaw before beginning to dip it into the egg mixture, etc. One of my favorite shrimps to use is the Frozen Argentinian shrimp from Trader Joes.

Can I use sweetened coconut shreds?

Yes! If you would prefer this to be extra sweet, you can sub the unsweetened coconut for sweetened.

Can I substitute the flour?

I’ve only tested this recipe using Almond Flour. Although, I have made it without the flour and it still comes out! If you’d like to omit it in this recipe you can still do so.

Do I have to use fine shredded coconut?

When using shredded coconut, you want to use fine shreds of coconut, not the big pieces of coconut! I also used unsweetened coconut but if you’d like for it to be sweeter then you can use regular. If you only have big pieces of shredded coconut, you can toss it in the food processor or blender to get it into fine shreds.

Air Fried Coconut Shrimp

This Air Fried Coconut Shrimp is made with a few simple ingredients and comes together in less than 20 minutes! It's great as an appetizer or easy weeknight dinner. Perfect to pair with a delicious sauce!

Ingredients

  • 13-15 shrimp (half pound) (I love the Argentinian shrimp from Trader joes!) frozen shrimp will work just make sure to thaw before using
  • 2 eggs, whisked
  • 1 cup fine shredded coconut (unsweetened)
  • 1/2 cup almond flour
  • 1/2 tsp sea salt
  • 1 tsp garlic powder
  • 1/4 tsp pepper
  • 1/4 tsp paprika
  • Optional: cilantro, red pepper flakes for garnish

Instructions

    1. Make three bowls: whisked eggs in one, almond flour with seasonings and shredded coconut in another.
    2. Make sure shrimp has thawed completely if using frozen. Pat dry with a paper towel.
    3. Dip shrimp in egg mixture and then roll in flour. Then roll in shredded coconut to completely coat. Set aside.
    4. Place in air fryer (with enough space in between each shrimp) at 350 degrees.
    5. Set for 12 minutes and flip the shrimp around half way through (at 6 minutes)
    6. Top with red pepper flakes, fresh cilantro.
    7. Enjoy with some sauce (sweet chili sauce pictured here!)
