Chicken Pesto Flatbread

I’m always looking for new ways to switch up my dinner and this Chicken Pesto Flatbread has quickly become a favorite of mine. It’s so simple to make and something that everyone will love too!

Chicken Pesto Flatbread

I love a good flatbread for a quick and easy meal! It’s generally something that many enjoy if you’re feeding others and good to throw together if you’re feeding for only one too. I know I’ve made a flatbread many of times and enjoyed the leftovers heated up the next day too. I’ve been craving all things pesto as it starts to get warmer out and wanted to make a new flatbread that packs in the flavor while still being simple and made with many pantry ingredients. This one is topped with rotisserie chicken, roasted red peppers, artichokes and you can’t leave off the drizzle of hot honey. Truly the best part of all the flatbreads!!

You’ll quickly want to add this to your rotation for spring and summer easy meals.

What you need for Chicken Pesto Flatbread:

  • Flatbread
  • Pesto
  • Rotisserie Chicken
  • Basil
  • Roasted Red Peppers
  • Shredded Mozzarella Cheese
  • Quartered Artichoke Hearts
  • Minced Garlic in olive oil
  • Black Pepper
  • Hot honey

How to make this flatbread:

Preheat oven to 400 degrees.

Lay out flatbread and brush on minced garlic.

Place on middle rack in oven for 5 minutes.

Remove from the oven and top with pesto, shredded mozzarella cheese, chicken, sliced roasted red peppers and artichokes. Sprinkle with black pepper.

Place back in the oven on the middle rack for 3-4 minutes.

Remove from the middle rack and place on baking sheet to finish for 7-8 minutes.

Top with more dollops of pesto, fresh basil and a drizzle of hot honey.


How to store your leftover flatbread:

It’s best to store your leftover flatbread in a sealed container! I like using these.

If you want to switch it up, try doing this instead:

  • Use grilled chicken or make crockpot chicken to shred instead of rotisserie!
  • Try it with your favorite pesto or make your own! I have a recipe here for pesto.
  • Use your favorite crust. I like to use the Trader Joe’s flatbread crust for this recipe. You will need to alter the time if using something different!

What flatbread are you using?

I used the Trader Joe’s Flatbread. It’s a long pizza crust!

Do you make your own pesto?

I have a recipe for your own pesto here but I did not use it this time! I used a fresh store bought one from Central Market for this recipe.

Do I have to use rotisserie chicken?

No! I like to use shredded rotisserie chicken because it makes this recipe a little easier. You can use whatever chicken you’d like here!
