Spinach Artichoke Flatbread

I love a good flatbread and if you’ve been to One Balanced Life, you know by the various options we have! There are so many ways to switch them up and this Spinach Artichoke may be a new favorite. It takes all the favorites from spinach artichoke dip, but on a crispy naan flatbread to make for the easiest lunch or dinner. Plus, I make my spinach artichoke spread with a protein packed cottage cheese! So this meal is not only crave-worthy, it’s also so satisfying for a meal.

Add this flatbread to your weeknight dinner menu! It comes together in less than 30 minutes and is so delicious.

What you need to make Spinach Artichoke Flatbread:

  • Naan
  • Cottage Cheese
  • Frozen Chopped Spinach
  • Artichokes
  • Minced garlic
  • Grated Parmesan
  • Shredded Mozzarella Cheese
  • Sea Salt
  • Garlic Powder
  • Black Pepper
  • Red Pepper Flakes

How to make this flatbread:

  1. Preheat oven to 425 degrees.
  2. Brush minced garlic on each naan.
  3. Place naan on the middle rack for 5 minutes.
  4. Mix together all ingredients leaving ¼ cup shredded mozzarella behind for the cheesy topping.
  5. Spread spinach artichoke mix on each naan. Top with 1 tbsp grated parmesan and remaining shredded mozzarella.
  6. Place back in the oven on the middle rack for 4 minutes. Keep an eye on it here as all ovens cook differently and it may get too crispy!
  7. Place on baking sheet to cook for remaining 4 minutes.
  8. Top with red pepper flakes.
  9. Enjoy!

This Spinach Artichoke Flatbread takes everything you love about spinach artichoke dip on a delicious flatbread that's perfect for an easy weeknight dinner or lunch.

Ingredients

  • 2 naan flatbreads
  • 2 tbsp minced garlic
  • 1/3 cup plain yogurt
  • 1/3 cup cottage cheese
  • 4 tbsp grated parmesan cheese
  • 1/3 cup artichokes, chopped
  • 1/3 cup frozen chopped spinach
  • 1/2 cup shredded mozzarella cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 425 degrees.

Notes

Make sure the frozen chopped spinach is thawed out and you remove all excess water before adding it to the mix.

I used Fage Yogurt but any plain yogurt would work

I used Good Culture cottage cheese.
