The holiday season means it’s time for all the holiday appetizers and I know these Spinach Artichoke Stuffed Mushrooms will definitely be happening a lot around here. These make for a perfect bite sized appetizer to make for your next party or gathering. I promise you everyone will love them! The creaminess of the Spinach Artichoke mixture isn’t like the normal one, it’s made with simple ingredients that you’ll feel good eating. Make these for your next gathering, I bet you everyone will love!

What you need for Spinach Artichoke Stuffed Mushrooms:

  • Cremini Mushrooms: I like to pick up a container of these at Trader Joe’s to use for this recipe! You will want about 16 mushrooms, but can do a little more with the spinach artichoke mixture for this recipe.
  • Chopped Frozen Spinach: You can buy a bag of frozen spinach to easily use for this recipe! I just heated it up in the microwave and then used a paper towel to get the excess liquid out.
  • Artichokes: I buy the can of artichokes at Trader Joe’s and cut them up to use for this recipe! I recommend using the artichokes that don’t have any additional seasonings.
  • Plain Greek Yogurt: I used Fage 0% Plain Greek Yogurt in this recipe and it’s one of my favorites to use here.
  • Cottage Cheese: This adds a perfect creaminess to the spinach artichoke dip without being heavy! It also packs in some protein which is always a plus.
  • Sea salt, pepper, garlic powder: Just a few seasonings to add here!
  • Shredded mozzarella cheese: You can’t forget the cheesiness of the dip and shredded mozzarella is perfect here.
  • Grated parmesan cheese: I add a little grated parmesan into the dip mix and sprinkle some on top before baking!

Recipe tip:

  • It’s best to enjoy these as soon as you make them! They are delicious when they are warm.
  • If you want to reheat, I like to put them in the air fryer to get them a little toasty!
  • The Spinach and Artichoke mixture makes enough for around 16-20 mushrooms!

When is it best to enjoy these?

It’s best to enjoy these right after you making them as they are delicious right out of the oven! If you need to transport them to your gathering, you can either make them and wait to put in the oven until you need to bake or reheat in an air fryer.

Can I prepare these ahead of time?

Yes! You can do all the steps to these mushrooms ahead of time besides baking them! The spinach and artichoke stuffing for the mushrooms can be prepped and stored in a separate bowl to easily stuff into the mushrooms when you are ready to bake them! They can also be transported already stuffed and just needing to be baked.

How to make Spinach Artichoke Stuffed Mushrooms:

  1. Start by removing the middle of the cremini mushroom. Set mushrooms on baking sheet.
  2. Spray with a little avocado oil spray.
  3. In bowl, combine greek yogurt, cottage cheese, spices, chopped artichokes, chopped frozen spinach (be sure to steam in the microwave and remove excess liquid before adding), grated parmesan cheese and shredded mozzarella cheese. Mix together.
  4. Take each mushroom and fill with spinach artichoke mixture. It’s okay if it’s really filled up!
  5. Sprinkle with grated parmesan cheese.
  6. Bake at 400 degrees for 20 minutes.
  7. Enjoy!

  • 16 cremini mushrooms
  • 1/3 cup plain greek yogurt (I used Fage 0%)
  • 1/3 cup cottage cheese
  • 1/3 cup chopped frozen spinach (steamed & drained)
  • 1/3 cup chopped artichokes
  • 2 tbsp grated parmesan cheese (plus additional for on top)
  • 1/3 cup shredded mozzarella cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/4 tsp pepper
  • Avocado oil spray

Instructions

    1. Start by removing the middle of the cremini mushroom. Set mushrooms on baking sheet.
