It’s peppermint season and these Easy Chocolate Peppermint Bites are the perfect bite to have around! Made with simple ingredients and perfect to have all week long or for a sweet to have during the holidays.

Easy Chocolate Peppermint Bites

The chocolate peppermint flavor is a must for the holidays and these bites make for the perfect bite sized snack to fix right now. The best part is that all you need are 5-6 ingredients to make these. They are perfect to take to your holiday gathering, cookie exchange or prep for the week! Try them dipped in chocolate or if you don’t want a lot of chocolate, you can do a light drizzle on top or dip half in. I did these with a mix of sea salt and decorative sugar on top, but sprinkles would add another festive addition to these bites!

What you need for Easy Chocolate Peppermint Bites:

Medjool Dates: I like to buy the pitted medjool dates but it’s easy to remove the pits for this recipe if that’s all that you can find! Be sure they are definitely medjool dates, as their is a difference in the variety of dates.

Raw Almonds: Using raw almonds make for a delicious nutty base for these bites. Be sure they are raw and aren’t roasted or salted!

Peppermint Flavor: a little goes a long way when it comes to peppermint flavoring and it makes for the perfect addition for these bites.

Maple syrup: The maple syrup adds the perfect touch of sweetness!

Cinnamon, Sea salt

Cacao Powder: Adding cacao powder here gives these bites the chocolatey taste!

Chocolate Chips: if you plan to dip these bites in chocolate or drizzle on top, you’ll need chocolate chips! You can use any kind of milk, dark or semi sweet chocolate here.

Christmas sprinkles or Decorative sugar: This adds the perfect holiday touch to these bites!

Best way to store these bites for the week:

I like to store them in either a Porter bowl or any other sealed Tupperware in the fridge. You can also store them in these reusable bags which I love to keep in the fridge!

How long will these Chocolate Peppermint Bites last?

These bites will last up to a week in the fridge! You can also move them into the freezer to last longer.

How to make these bites:

  1. Start by adding the pitted medjool dates and almonds in the food processor.
  2. Blend until it’s completely processed.
  3. Add in maple syrup, peppermint flavor, cacao powder and cinnamon. Blend to mix.
  4. Place in the fridge for 20 minutes.
  5. Using a cookie scoop, scoop out and roll into balls.
  6. Melt chocolate and dip each bite into chocolate to completely cover.
  7. Sprinkle with flaky sea salt and decorative sugar or sprinkles.

These Easy Chocolate Peppermint bites are made with only a few ingredients and make for the perfect treat to have during the holidays.

Ingredients

  • 1 cup raw almonds
  • 1 cup pitted medjool dates
  • 1 tbsp maple syrup
  • 1 tsp peppermint
  • 3 tbsp cacao powder
  • 1/2 tsp cinnamon
  • dash of sea salt
  • optional: 1/2 cup semi sweet chocolate chips for melting; decorative sugar

Instructions

  1. Combine dates and raw almonds in a food processor. Blend.
  2. Process completely and then add maple syrup, peppermint flavor, cacao powder, cinnamon and sea salt.
  3. Blend.
  4. Place in the fridge for 20 minutes.
  5. Using a cookie scoop, scoop out and roll into balls. Set aside.
  6. If dipping in chocolate, melt chocolate chips and dip each bite to cover completely.
  7. Sprinkle with flaky sea salt and decorative sugar or sprinkles.
  8. Enjoy!
