Thai Sesame Shrimp Salad

All I’m craving right now are the big salads and this Thai Sesame Shrimp Salad is seriously sooo good! There’s something about a sesame dressing then a bunch of veggies in a salad and sautéed shrimp. AHHH I think you’re going to like this one! The dressing alone is great to make and use throughout the week even if you’re not making this salad. And if shrimp isn’t your thing, try doing this with grilled chicken or even tofu!

Thai Sesame Shrimp Salad

What you need for Thai Sesame Shrimp Salad:

  • Mixed Greens
  • Shrimp
  • Carrots
  • Red cabbage
  • Cashews, slivered almonds
  • Green beans
  • Garlic clove

Grab these ingredients to make the Sesame Dressing:

  • Toasted sesame oil
  • Olive oil
  • Lime
  • Honey
  • Coconut aminos
  • Rice Vinegar
  • Sea salt

How could I meal prep this salad?

Great question! I love to make meals as easy as possible during the week. This salad is another meal that you can prep some of the ingredients and then easily throw this together when meal time comes. Try preparing more shrimp for the week or sautéing the veggies for the salad to keep for easy access to top on this salad. Another great addition to prep is the sesame dressing!

Thai Sesame Shrimp Salad

Thai Sesame Shrimp Salad

Cook Time: 15 minutes
Total Time: 20 minutes

a simple, delicious salad!

Ingredients

  • 2 cups mixed greens
  • 1/3 cup red bell pepper
  • 1/4 cup red cabbage
  • 1/4 cup shredded carrots
  • 1/2 cup green beans
  • 2 tbsp slivered almonds
  • 6 shrimp
  • 1 tbsp toasted sesame oil
  • 1 garlic clove
  • 1/4 tsp sea salt & pepper
  • optional: avocado
  • For the sesame dressing:
  • 1/4 cup olive oil
  • 1/4 cup rice vinegar
  • 1 lime, juiced
  • 2 tbsp toasted sesame oil
  • 2 tsp coconut aminos
  • 1 tbsp honey
  • 1/4 tsp sea salt

Instructions

  1. Start by mixing all ingredients together for the Sesame Dressing. Mix thoroughly. Set aside
  2. In pan, add minced garlic, sesame oil, green beans and shrimp. Saute shrimp and green beans until fully cooked. Set aside.
  3. Chop up remaining veggies if needed: red cabbage, red bell pepper, carrots.
  4. Assemble salad with mixed greens, shredded carrots, red cabbage, red bell pepper, slivered almonds, cashews and sauteed green beans and shrimp.
  5. Top with sesame dressing and enjoy!
