BBQ Chicken Stuffed Sweet Potatoes

I love a good easy weeknight dinner and these BBQ Chicken Sweet Potatoes are one of my favorites to include in the rotation. Not only are they perfect to meal prep, but they are satisfying and nutritious. Finding meals like this that you can easily make during the week are great to incorporate into your routine. Prepping a batch of shredded crockpot BBQ Chicken is a great way to use it in a variety of ways, including these stuffed sweet potatoes!

BBQ Chicken Sweet Potatoes

I’m always looking for easy ways to switch up my weeknight dinners while keeping them simple and nutritious too. I’ve been SO into sweet potatoes lately and they are part of my weekly grocery haul because there are so many ways to switch them up. Everyone has loved the Buffalo Chicken Sweet Potato Bowls and the Sloppy Joe Sweet Potatoes, so I thought I’d give you another option! I also love these for the warmer temps. I can guarantee everyone will love too!

All you need are a few simple ingredients and some prep time and these will be ready to go for a simple, protein packed meal!

What you need to make these BBQ Chicken Stuffed Sweet Potatoes:

  • Sweet Potatoes
  • BBQ Sauce
  • Chicken Breast
  • Chicken Broth
  • Slaw mix
  • Shredded Carrots
  • Honey
  • Mustard
  • Mayo
  • Lemon Juice
  • Apple Cider Vinegar
  • Green onion
  • Sea Salt
  • Black Pepper
  • Garlic powder
  • Smoked paprika
  • Onion powder
  • Extra Virgin Olive Oil

How to make these Stuffed Sweet Potatoes:

  1. Prep the crockpot BBQ Chicken by adding chicken breast, chicken broth, bbq sauce and seasonings to the crockpot. Mix to combine. Set crockpot on high for 4+ hrs.
  2. Prep the sweet potatoes. Poke holes in each potato. Drizzle with olive oil and top with sea salt. Bake in the oven for 45-60 minutes until you can cut in the middle.
  3. Prepare slaw by combining all ingredients in a bowl.
  4. Once chicken has cooked, shred with a hand mixer before adding back to the crockpot to absorb all of the sauce.
  5. Cut sweet potatoes in the middle, add bbq chicken and top with slaw mixture. Top with fresh green onion.
  6. Enjoy!!

If you want to switch these up, try doing this instead:

  • Use your favorite BBQ sauce!
  • Cut and roast the sweet potatoes instead of serving whole!
  • Leave off the slaw and use pickled onions, fresh herbs and a drizzle of bbq sauce

How to store your leftovers:

I like using these containers for easy storage in the fridge! I recommend storing everything separately and assembling at meal time.

These BBQ Chicken Stuffed Sweet Potatoes are perfect for an easy weeknight dinner and great to meal prep for a quick lunch or dinner. Made with just a few simple ingredients!

Ingredients

  • 3 sweet potatoes
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp sea salt
  • 1.5lb chicken breast
  • 12 oz BBQ Sauce
  • 1/3 cup chicken broth
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • for the slaw:
  • 2 cups slaw mix
  • 1 cup thinly shredded carrot
  • 3 tablespoon mayo
  • 2 teaspoon apple cider vinegar
  • 1 teaspoon mustard
  • 1 teaspoon honey
  • 1 teaspoon lemon juice
  • 1/4 teaspoon salt
  • 2 tbsp green onion

Instructions

  1. Prep the crockpot BBQ Chicken by adding chicken breast, chicken broth, bbq sauce and seasonings to the crockpot. Mix to combine. Set crockpot on high for 4+ hrs.
  2. Prep the sweet potatoes. Preheat oven to 400 degrees. Poke holes in each potato. Drizzle with olive oil and top with sea salt. Bake in the oven for 45-60 minutes until you can cut in the middle.
  3. Prepare slaw by combining all ingredients in a bowl.
  4. Once chicken has cooked, shred with a hand mixer before adding back to the crockpot to absorb all of the sauce.

Notes

Shredded BBQ Crockpot Chicken will be enough for more than 3 sweet potatoes.
