Buffalo chicken Sweet Potato Bowl
I’m always looking for new ways to switch up some of my favorites: Buffalo chicken and sweet potatoes! So that’s where this Buffalo Chicken Sweet Potato Bowl came in. Not only is this packed with flavor, but it’s packed with protein and perfect to make for an easy weeknight meal.

One of my favorite things to have year around is buffalo chicken. I have a bunch of different recipes on One Balanced Life for it, but a few of my favorites are Buffalo Chicken Salad and Buffalo Chicken Flatbread. I pick up sweet potatoes almost weekly at the grocery store to have for easy meals too. If I’m looking for easy dinners to throw together during the week, I always aim to have ones that are packed with protein, make for good leftovers and easy to switch up too.
What you need for Buffalo Chicken Sweet Potato Bowls:
- Chicken Breast
- White onion
- Garlic cloves
- Buffalo sauce
- Chicken broth
- Sweet Potatoes
- Slaw mix
- Mayo
- Apple Cider Vinegar
- Blue cheese
- Cilantro
- Green onion
- Avocado Oil Spray
- Sea Salt
- Black Pepper
- Paprika
- Garlic powder
- Sugar
How to make these bowls:
- Start by preparing the crockpot buffalo chicken. Add chicken breast, seasonings, onion, chicken broth and buffalo sauce. Mix together. Set on high for 3-4hrs.
- Preheat oven to 400 degrees. Chop up sweet potatoes.
- Season sweet potatoes by coating with avocado oil spray, sea salt, garlic powder and pepper. Mix to coat.
- Place in the oven to bake for 30-35 minutes. Flipping half way.
- Prepare slaw by mixing together ingredients. Set aside.
- Once chicken has cooked for 3 or so hours, remove and shred with fork or hand mixer.
- Add chicken back into the crockpot to mix with buffalo sauce. Let sit before serving.
- Assemble bowls by adding sweet potato, slaw and shredded buffalo chicken to a bowl. Top with crumbled blue cheese, cilantro and green onion.
- Enjoy!
How to store your leftovers:
It’s best to store any leftovers in a sealed container in the fridge. I like using these for easy fridge storage!
If you want to switch it up, try doing this instead:
- Use Japanese sweet potato instead of regular
- Try it with your favorite buffalo sauce or make your own!
- Do a mix of fresh veggies instead of slaw

These Buffalo Chicken Sweet Potato Bowls make for an easy weeknight dinner that's packed with flavor and so simple too!
Ingredients
- for the crockpot chicken:
- 1.5lb chicken breast
- 1 cup white onion, diced
- 2 garlic cloves, minced
- 1/4 cup chicken broth
- 1 jar (15oz) buffalo sauce
- 1 tsp paprika
- 1 tsp garlic powder
- 1/2 tsp sea salt
- for the sweet potatoes:
- 4.5 cups sweet potatoes, chopped
- 1/2 tsp sea salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- Avocado Oil Spray
- for the slaw mix:
- 1/4 cup mayo
- 2 cups slaw mix
- 1 tsp apple cider vinegar
- 1 tsp sugar
- 1/4 tsp salt
- dash of pepper
- for the bowls:
- 2 tbsp crumbled blue cheese
- 2 tbsp green onion
- 2 tbsp cilantro
Instructions
