Street Corn Inspired Baked Tacos

I love making baked tacos for an easy weeknight dinner and find they are a crowd pleaser too! These Street Corn Inspired Baked Tacos take one of my favorites, street corn, combined with the baked taco to make a delicious meal.

Street Corn Inspired Baked Tacos

I’m always looking for ways I can switch up my dinners while still keeping them easy, healthy and tasting good! If you’ve been to One Balanced Life, you may have noticed I love all things street corn. While this is just an inspiration of it, I love to find ways to do that in my kitchen. A few other favorites are the Street Corn Inspired Pasta Salad and Street Corn Inspired Chicken Salad too.

This recipe is great because it’s something that everyone will love, packs in a good amount of protein and made with simple ingredients! Including one of my favorite to pick up at the store, rotisserie chicken. You will love these for a quick and easy meal.

What you need for Street Corn Inspired Baked Tacos:

  • Corn Tortillas
  • Rotisserie Chicken
  • Roasted Corn
  • Cilantro
  • Green chiles
  • Crumbled Cotija Cheese
  • Shredded Monterey Jack
  • Plain Greek Yogurt
  • Lime
  • Mayo
  • Hot Sauce
  • Cumin
  • Chili Powder
  • Garlic Powder
  • Sea Salt

How to make these tacos:

  1. Preheat oven to 375 degrees.
  2. In a bowl, combine ingredients for street corn inspired chicken mixture. Mix to combine.
  3. On a large baking sheet, lay out corn tortillas.
  4. Place in the preheated oven for 3-4 minutes to warm. It’s important that you do this so they don’t break when you bake them!!
  5. Remove tortillas from the oven and top each one with shredded monterey jack cheese. On one side, add street corn inspired chicken. Fold tortilla over and press down. Do this to each tortilla until you’ve used up all of your chicken.
  6. Spray lightly with avocado oil spray.
  7. Place in the oven for 15 minutes. Broil for 2-3 minutes.
  8. Remove from the oven and top with cilantro and crumbled cotija cheese.
  9. Enjoy!

How to store your leftovers:

It’s best to store your leftovers in a sealed container! I like using these in the kitchen.

If you want to switch these up, you can try this instead:

  • Use shredded mexican cheese or shredded mozzarella cheese.
  • Try it with shredded chicken breast instead of rotisserie chicken.
  • Make them with your favorite corn tortilla. I used the Whole Foods 365 brand!

What tortillas did you use?

I used the corn tortillas from 365 by Whole Foods Market. You can use any corn tortilla that you like!

How do you prevent the tortillas from breaking?

It’s a must that they are heated up before you add the ingredients in! I add mine to the oven for 3-4 minutes before adding in the shredded cheese and chicken.

Can I meal prep these?

While these wouldn’t be what I normally think to meal prep, the leftovers are delicious! I had them for two days of leftovers 😉

These Street Corn Inspired Baked Tacos are packed with flavor and perfect to make for an easy weeknight dinner!

Ingredients

  • 2 cups rotisserie chicken, shredded
  • 8 corn tortillas
  • 1 cup roasted corn
  • 3 tbsp cilantro
  • 1 jar (4oz) mild green chiles
  • 1/3 cup plain greek yogurt
  • 2 tbsp mayo
  • 1 tbsp hot sauce
  • 1/4 cup grated cotija cheese
  • 1/2 lime, juiced
  • 1 1/2 cups shredded monterey jack cheese
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1/2 tsp sea salt
  • avocado oil spray
  • optional: cilantro, cotija cheese for topping

Instructions

  1. Preheat oven to 375 degrees.
  2. In a bowl, combine ingredients for street corn inspired chicken mixture: shredded chicken, green chiles, cilantro, cotija cheese, roasted corn.
  3. In a small bowl, mix sauce ingredients: mayo, plain greek yogurt, lime juice, hot sauce and seasonings. Mix to combine.
  4. Pour sauce on chicken and mix to combine.
  5. On a large baking sheet, lay out corn tortillas.
  6. Place in the preheated oven for 3-4 minutes to warm. It's important that you do this so they don't break when you bake them!!
  7. Remove tortillas from the oven and top each one with shredded monterey jack cheese. On one side, add street corn inspired chicken. Fold tortilla over and press down. Do this to each tortilla until you've used up all of your chicken.
