Stuffed Pepper Skillet

I love a good, easy weeknight dinner and this Stuffed Pepper Skillet is perfect to add to your rotation! It’s made with simple ingredients, uses up some pantry items and something that everyone will enjoy!

Stuffed Pepper Skillet

I’m always looking for easy meals to add to my weeknight dinner rotation that are packed with flavor, take less than 30 minutes to make and mean leftovers too. That’s where this Stuffed Pepper Skillet comes in. I’ve made stuffed peppers before and I think I like this way even better! I don’t really want to eat a whole pepper anyways so this is the best of both worlds. There are many ways to switch this up too! If you don’t want to use ground beef, you can try with ground chicken or turkey. You can also add in more veggies like zucchini or squash too!

This skillet meal is perfect to make for an easy dinner and will surely be a crowd pleaser!

What you need for Stuffed Pepper Skillet:

  • 1 lb ground beef
  • White Long Grain rice
  • Beef broth
  • Red Bell Pepper
  • Green Bell Pepper
  • Yellow onion
  • Garlic cloves
  • Canned Fire Roasted Tomatoes
  • Tomato paste
  • Shredded Mexican Cheese
  • Oregano
  • Sea salt
  • Black pepper
  • Garlic Powder
  • Cilantro
  • Red Pepper Flakes

How to make this skillet:

  1. Start by sautéing your garlic and onion on the stove top.
  2. Add in ground beef to brown. Add in seasonings.
  3. Mix in bell pepper to saute for 2-3 minutes.
  4. Pour in rice, beef broth and tomato paste. Bring to a boil and then set timer for 15 minutes on a simmer. Place lid on top of pan.
  5. Once timer is up, add in fire roasted tomatoes to mix.
  6. With heat low, add shredded mexican cheese on top. Place lid on to let cheese get melty.
  7. Remove from the heat and add cilantro on top.
  8. Enjoy!

How to store your leftovers:

It’s best to store your leftovers in a sealed container in the fridge! These work well for easy reheating too. I like using these containers for easy storage.

IF you want to switch this up, try doing this instead:

  • Use a different ground meat like chicken or turkey!
  • Load up the veggies and add zucchini or squash
  • Use this to prep for the week!

Can I use a different rice?

I think white long grain rice works best since it is a fast cooking one! Any other rices would take longer.

This Stuffed Pepper Skillet makes for an easy weeknight dinner and all made in one pan!

Ingredients

  • 1lb ground beef
  • 1 cup yellow onion, diced
  • 2 garlic cloves, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 tbsp tomato paste
  • 1 cup white long grain rice
  • 2 cups beef broth
  • 1 can (14.5oz) fire roasted tomatoes
  • 1/2 cup shredded mexican cheese (add desired amount on top)
  • 1/2 tsp garlic powder
  • 1 1/2 tsp oregano
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • optional: cilantro and red pepper flakes for topping

Notes

Be sure rice is fast cooking or else this will take a long time!!

You can use any ground meat.
