If you’re looking for a new easy weeknight dinner or appetizer, you have to try these Jalapeño Popper Beef Taquitos! Combining a few of my favorite things into this recipe and they are so good!

Jalapeño Popper Beef Taquitos

If you love the jalapeño popper flavors and love a good crunchy tortilla and taquito, then you’ll love these! Not only are they made with simple ingredients but they are so easy to make! These taquitos would be perfect for an easy lunch or dinner or served as an easy appetizer. After the love on the Buffalo Chicken Taquitos, I knew I needed to recreate another version for you to make at home.

These taquitos come together in less than 30 minutes, make for an easy weeknight dinner and a meal that everyone will love!

What you need to make these Jalapeño Popper Beef Taquitos

  • Tortillas (I used Siete Almond Flour Tortillas)
  • Ground Beef
  • Jalapeño
  • Shredded Cheddar Cheese
  • Bacon
  • Green onion
  • Plain Greek Yogurt
  • Mayo
  • Sea Salt
  • Garlic Powder
  • Onion Powder
  • Black Pepper

How to make these taquitos:

  1. Start by preparing the ground beef. Add it to a pan to brown.
  2. Cook bacon according to package.
  3. In a bowl, mix together ground beef, jalapeño, green onion, bacon and shredded cheddar cheese.
  4. Mix together plain greek yogurt, mayo and seasonings. Mix together to combine.
  5. Heat up tortillas in the microwave for 10 seconds.
  6. Add some of the jalapeño popper mix to the tortilla, add more shredded cheddar cheese and tightly roll up.
  7. Place tortilla on a heated skillet. Heat on both sides until they get crispy.
  8. Cut in half and enjoy!

How to store your leftover taquitos:

While it is best to enjoy these after making, it is possible you may have some leftovers or leftover ingredients! I like using these reusable silicone bags for some leftover ingredients. These containers are great for easy fridge storage.

  • Use a mix of cheeses!
  • Try your favorite tortilla
  • Use ground turkey or chicken

What tortillas do you use?

I like using the Siete tortillas because they get crispy! Corn tortillas are great to use here too.

Can you reheat these?

These are best to enjoy after making but can be reheated too! I’d recommend placing them in the air fryer to reheat so they don’t get soggy.

These Jalapeño Popper Beef Taquitos are made with simple ingredients while still packed with flavor!

Ingredients

  • 6 Almond Flour Tortillas
  • 1 cup ground beef, cooked
  • 1/3 cup bacon, crumbled
  • 2 tbsp green onion
  • 1 jalapeno, finely diced
  • 1/2 cup shredded cheddar cheese
  • 1/3 cup + 1 tbsp plain greek yogurt
  • 2 tbsp mayo
  • 1 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 tsp sea salt
  • dash of pepper

Instructions

  1. Start by preparing the ground beef. Add it to a pan to brown. Season with a little sea salt and pepper.
  2. Cook bacon according to package.
  3. In a bowl, mix together ground beef, jalapeño, green onion, chopped bacon and 1/4 cup shredded cheddar cheese.
  4. In a small bowl, mix together plain greek yogurt, mayo and seasonings. Mix together to combine.
  5. Heat up tortillas in the microwave for 10 seconds.
  6. Add some of the jalapeño popper mix to the tortilla, add remaining shredded cheddar cheese to each tortilla (1/4 cup) and tightly roll up.
  7. Place tortilla on a heated skillet. Heat on both sides until they get crispy.
  8. Cut in half and enjoy!

Notes

Corn tortillas work great here too.
