Talk about an easy meal! This Chicken Sausage and Butternut Wild Rice One Pan meal so simple for a quick weeknight dinner and super flavorful. I love having a dish like this to prep and have for leftovers during the week too. This one is great because it’s minimal ingredients and can be made in 10 minutes tops. Chicken Sausage and Butternut Wild Rice One Pan

What you need:

  • Wild Rice
  • Chicken & Apple Sausages
  • Cubed Butternut Squash
  • Spinach
  • Red onion
  • Minced garlic
  • Vegetable broth
  • Sea salt, pepper, thyme, oregano
  • Fresh parsley

How to make this one pan meal:

  1. Cook wild rice according to package.
  2. In pan, saute minced garlic and onion with a little olive oil/avocado oil.
  3. Add butternut squash and chicken sausage to pan and saute.
  4. Once rice has finished cooking, add to the pan with veggie broth and seasonings.
  5. Continue to mix on medium to low heat.
  6. Add fresh spinach and continue to mix up until it wilts. Adjust seasonings to taste if needed.
  7. Enjoy!

An easy fall dish!

Ingredients

  • 2 cups cooked wild rice
  • 2 cups cubed butternut squash
  • 1 cup veggie broth
  • 1/2 cup red onion
  • 2 chicken & apple sausages (option to add more)
  • 2 handfuls fresh spinach
  • 1 tbsp extra virgin olive oil
  • 1 garlic clove, minced
  • 1 tsp oregano
  • 1 tsp thyme
  • 2 tbsp fresh parsley (more for garnish)
  • 1/2 tsp sea salt (adjust to taste)
  • 1/4 tsp pepper

Instructions

  1. Cook wild rice according to package.
  2. In pan, add minced garlic, olive oil and onion to saute.
  3. Add butternut squash and chicken sausage and contine to saute.
  4. Once rice has finished cooking, add wild rice with vegetable broth and seasonings. Continue to mix.
  5. Add two handfuls of fresh spinach and let it wilt.
  6. Adjust seasonings to taste if needed.
  7. Top with fresh parsley.
  8. Enjoy!

  1. Very flavorful and healthy dish. However, it took forever for the butternut squash to soften. Next time I think I would roast it first and maybe add it with the rice. I added mushrooms because I needed to use them up.
