Chicken Sausage and Butternut Wild Rice One Pan
What you need:
- Wild Rice
- Chicken & Apple Sausages
- Cubed Butternut Squash
- Spinach
- Red onion
- Minced garlic
- Vegetable broth
- Sea salt, pepper, thyme, oregano
- Fresh parsley
How to make this one pan meal:
- Cook wild rice according to package.
- In pan, saute minced garlic and onion with a little olive oil/avocado oil.
- Add butternut squash and chicken sausage to pan and saute.
- Once rice has finished cooking, add to the pan with veggie broth and seasonings.
- Continue to mix on medium to low heat.
- Add fresh spinach and continue to mix up until it wilts. Adjust seasonings to taste if needed.
- Enjoy!

An easy fall dish!
Ingredients
- 2 cups cooked wild rice
- 2 cups cubed butternut squash
- 1 cup veggie broth
- 1/2 cup red onion
- 2 chicken & apple sausages (option to add more)
- 2 handfuls fresh spinach
- 1 tbsp extra virgin olive oil
- 1 garlic clove, minced
- 1 tsp oregano
- 1 tsp thyme
- 2 tbsp fresh parsley (more for garnish)
- 1/2 tsp sea salt (adjust to taste)
- 1/4 tsp pepper
Instructions
- Cook wild rice according to package.
- In pan, add minced garlic, olive oil and onion to saute.
- Add butternut squash and chicken sausage and contine to saute.
- Once rice has finished cooking, add wild rice with vegetable broth and seasonings. Continue to mix.
- Add two handfuls of fresh spinach and let it wilt.
- Adjust seasonings to taste if needed.
- Top with fresh parsley.
- Enjoy!

Very flavorful and healthy dish. However, it took forever for the butternut squash to soften. Next time I think I would roast it first and maybe add it with the rice. I added mushrooms because I needed to use them up.
