Grilled Peach Flatbread

This summer calls for all of the flatbreads and this Grilled Peach Flatbread is packed with flavor and perfect to add to your summer menu! I can’t get enough of peaches right now and they are delicious to top on flatbreads too. This combination is the best mix of a little sweet and savory too.

Grilled Peach Flatbread

I’m always looking for ways I can switch up my summer dinners while adding fresh or in season fruit or produce to it. That’s where this Grilled Peach Flatbread comes in. Peaches are sooo good right now. If you haven’t picked any up at the store, here’s your sign that you should add them to your grocery list and then you can make this flatbread too 🙂

I served this one for a girls night and wanted to get their thoughts on it before I shared it with you! Safe to say it was a hit! The flavors here are really so good. It has the sweetness from the peaches but the savory from the mozzarella, red onion and everything tied together with a drizzle of hot honey. I’m convinced that all flatbreads need a drizzle of hot honey.

What you need for Grilled Peach Flatbread:

  • Flatbread
  • Peach
  • Pesto
  • Shredded Mozzarella
  • Minced garlic
  • Arugula
  • Red onion
  • Basil
  • Hot Honey
  • Avocado Oil Spray

How to make this flatbread:

  1. Preheat oven to 425 degrees.
  2. Place flatbread on middle rack and set timer for 3 minutes.
  3. Remove from the oven and brush with minced garlic.
  4. Cut peach slices and place on heated grill pan to cook on both sides.
  5. On flatbread, spread pesto, shredded mozzarella, grilled peaches and red onion.
  6. Place back in the oven to bake for 10-12 minutes.
  7. Remove from the oven and top with fresh basil.
  8. Top with arugula and drizzle with hot honey.
  9. Enjoy!!

How to store your leftovers:

While this is best to enjoy after making, you can also store your leftovers in a sealed container to reheat for the next day. I like using these containers!

If you want to switch this up, try doing this instead:

  • Add protein like grilled chicken or prosciutto!
  • Use your favorite pizza crust or flatbread
  • Add dollops of ricotta for more cheesiness!
