Street Corn Inspired Shrimp Tostadas

I love a good tostada for an easy weeknight dinner and these Street Corn Inspired Shrimp Tostadas are perfect for a summer dinner! Made with a few simple ingredients and many that I picked up from Trader Joe’s for my easy summer recipe series. These are light and delicious to add to your weeknight dinner menu.

Street Corn Inspired Shrimp Tostadas

I’m always looking for ways to switch up what I make for dinner and I love a good tostada for a quick and easy meal. The crisp tortilla, sautéed shrimp and creamy street corn topping on these are sooo good! I’ve been craving everything street corn this summer and I’ve loved incorporating some of those flavors into my recipes. These tostadas come together in less than 30 minutes for an easy meal and I can guarantee that everyone will love them!!

If you want to make this even simpler, try to prepare the street corn inspired topping before and place in the fridge! It actually gets even better as it soaks everything up so it’ll make for a delicious topping later on!

What you need for Street Corn Inspired Shrimp Tostadas:

  • Corn tortillas
  • Frozen Argentian Shrimp
  • Roasted Corn
  • Avocado
  • Jalapeno
  • Cilantro
  • Red Onion
  • Mayo
  • Cotija Cheese
  • Plain Greek yogurt
  • Lime
  • Cumin
  • Smoked Paprika
  • Garlic powder
  • Chili Powder
  • Sea Salt
  • Black Pepper
  • Avocado Oil Spray
  • Avocado Oil

How to make these tostadas:

  1. Preheat oven to 400 degrees.
  2. Add corn tortillas to baking sheet and lightly spray with avocado oil spray.
  3. Place in the oven to bake for 10 minutes, flipping half way through.
  4. Prepare the shrimp by defrosting and patting dry. Mix together shrimp seasonings in a small bowl. Add to bowl with shrimp and mix to evenly coat shrimp.
  5. Heat up cast iron skillet with a little avocado oil.
  6. Once pan is hot, add shrimp. Cook on both sides until fully cooked through. 3-4 minutes on each side.
  7. Prepare street corn inspired topping for the tostadas by combining all ingredients into a bowl: roasted corn, jalalpeno, red onion, cilantro, cotija cheese, mayo, plain greek yogurt, lime, cumin, smoked paprika and sea salt.
  8. Mash avocado.
  9. Prepare tostadas by adding mashed avocado, sauteed shrimp and street corn inspired topped on each one. Top with additional cilantro and drizzle with lime.
  10. Enjoy!!

How to store your leftovers:

While the tostadas are a meal you want to eat as soon as you make it, the street corn is one that you may have some leftovers or it can be prepped ahead of time! I like to use these containers for easy storage.

If you want to switch it up, try doing this instead:

  • Use refried beans or black beans instead of avocado!
  • Add a drizzle of my creamy jalapeno sauce on top!
  • Use your favorite corn tortillas

I love to cook mine in the cast iron to get a good saute on the shrimp. I used this one!

Can I meal prep any of this?

Most of this recipe is best if you enjoy it right after making it! Although you can prep the street corn inspired topping and place it in the fridge so it’s ready to go when you make these tostadas.

Ingredients

  • for the shrimp:
  • 9-10 shrimp
  • 1 tbsp avocado oil
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1/2 tsp sea salt
  • 1/4 tsp cumin
  • 1/4 tsp black pepper
  • for the street corn inspired topping:
  • 1 cup roasted corn
  • 1 jalapeno, finely diced
  • 3 tbsp red onion, finely diced
  • 3 tbsp cotija cheese
  • 2 tbsp cilantro
  • 1/2 lime, juiced
  • 3 tbsp mayo
  • 2 tbsp plain greek yogurt
  • 1/4 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp sea salt
  • for the tostadas:
  • 3 corn tortillas
  • 1 avocado, mashed
  • Avocado Oil Spray
  • optional: cilantro for topping, lime to top
