Chipotle Shrimp Tostadas
I love a good easy weeknight dinner and these Chipotle Shrimp Tostadas are so easy to make and perfect for a quick meal! These pack a flavor punch and come together in less than 30 minutes!
One of my go-to’s for an easy dinner during the week is a version of a tostada! There are so many ways to switch them up with different protein and toppings. A staple in my freezer is a bag of shrimp! I like to get the Argentinian shrimp from Trader Joe’s and always use these to quickly defrost for a quick and easy meal.
These Chipotle Shrimp Tostadas make for an easy weeknight dinner that’s packed with flavor and so simple too! Don’t want to do a tostada? Try this in a bowl or tacos.
What you need to make Chipotle Shrimp Tostadas:
- Shrimp
- Corn tortillas
- Refried Beans
- Red onion
- Cotija cheese
- Cilantro
- Chipotle Powder
- Garlic Powder
- Cumin
- Sea Salt
- Black Pepper
- Avocado Oil Spray
What you need for creamy cilantro sauce:
- Cilantro
- Plain Greek Yogurt
- Olive Oil
- Garlic clove
- Sea Salt
- Water
How to make these tostadas:
- Preheat oven to 400 degrees.
- Bake corn tortilla for 10 minutes. Flipping half way.
- Defrost shrimp (I use the frozen Argentinian shrimp from Trader Joes!). Lay on paper towel and pat completely dry.
- Mix together seasonings in a small bowl. Add to shrimp and mix to completely coat.
- Add avocado oil to a cast iron skillet.
- Once heated, add shrimp. Cook on both sides until fully cooked through.
- Heat up refried beans.
- Add all cilantro sauce ingredients to a blender to blend.
- Assemble tostada with refried beans, shrimp, cilantro, red onion, cotija cheese and creamy cilantro dressing.
- Enjoy!
How to store your leftovers:
These will be best to enjoy after making, but if you do have any leftovers it is best to store them in a sealed container in the fridge. I like using these containers for easy fridge storage!

- 1 tsp chipotle powder
- 1/2 tsp garlic powder
- 1/4 tsp sea salt
- 1/4 tsp cumin
- 1/4 tsp black pepper
- for the creamy cilantro sauce:
- 1/3 cup plain yogurt
- 2 tsp olive oil
- 1/3 cup cilantro, packed
- 2 garlic cloves
- 1 tbsp water
- 1/4 tsp sea salt
Instructions
