What you need for Cilantro Lime Chicken Salad

  • Rotisserie Chicken
  • Cilantro
  • Lime
  • Lime zest
  • Red Onion
  • Celery
  • Plain Greek Yogurt
  • Avocado Oil Mayo
  • Sea Salt
  • Cumin
  • Garlic Powder
  • Black Pepper

How to make this chicken salad:

  1. Start by shredding your rotisserie chicken.
  2. Thinly chop up celery, red onion and cilantro.
  3. In a small bowl, combine plain greek yogurt, avocado oil mayo, lime juice, sea salt, cumin and garlic powder. Mix.
  4. Pour dressing on shredded chicken and mix to combine.
  5. Serve however you like! Enjoy!

It’s best to store your chicken salad in a sealed container in the fridge. I like using these for easy fridge storage!

This Cilantro Lime Chicken Salad is perfect for meal prep and delicious to have for a quick and easy lunch! Serve it on toast or with crackers for an easy meal.

Ingredients

  • 1.5 cups shredded rotisserie chicken
  • 1/4 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 2 tbsp cilantro
  • 1 lime, juiced
  • 1/4 cup + 1 tbsp avocado oil mayo
  • 2 tbsp plain greek yogurt
  • 1/2 tsp garlic powder
  • 1/4 tsp lime zest
  • 1/4 tsp cumin
  • 1/2 tsp sea salt
  • dash of pepper

Instructions

  1. Shred rotisserie chicken.
