Spicy Crockpot Chicken Tostadas

If you want something new to switch up your usual dinner with, these Spicy Crockpot Chicken Tostadas are for you! I love being able to toss chicken in the crockpot and let it cook! Not only does it make a bunch which is great to have all week long, but all you need are a few simple ingredients to throw it together.

These Spicy Crockpot Chicken Tostadas are perfect for an easy weeknight dinner or meal prepped lunch, they are packed with protein and full of flavor.

What you need for Spicy Crockpot Chicken Tostadas:

  • Chicken breast
  • Chipotle Peppers
  • Chicken Broth
  • Sea Salt
  • Black Pepper
  • Chili Powder
  • Smoked Paprika
  • Cumin
  • Dried Oregano
  • Garlic Powder
  • Corn tortillas
  • Refried Beans
  • Avocado
  • Iceberg lettuce
  • Cilantro

How to make these tostadas:

  1. In a crockpot, add chicken broth and chipotle peppers.
  2. Mix together seasonings in small bowl. Coat some on the chicken and pour the rest in the crockpot.
  3. If chicken are thicker, butterfly for more even cooking. Let it cook on high for 3-4 hours or low for 5-6 hrs.
  4. Once cooked, remove chicken breasts and shred with a fork. Add back to the crockpot to soak up spicy sauces.
  5. Preheat oven to 400 degrees. Cook corn tortilla for 10 minutes. Flipping half way.
  6. Heat up refried beans and mash avocado with a little sea salt and garlic powder.
  7. Layer your tostadas with refried beans, mashed avocado and shredded spicy chicken.
  8. Top with shredded iceberg lettuce, cilantro and cojita cheese.
  9. Enjoy!

How long does this chicken last for?

This shredded chicken will last in the fridge up to 4 days!

Do I have to use a crockpot?

I’ve only tested this in the crockpot! You can try making it in the Instant Pot for quicker cooking if you’d like but I don’t have specific cooking instruction.

Is the chicken really spicy?

No! It has a good little kick to it. You can also omit one of the chipotle peppers or the adobo sauce if you want it to have less spice.

Ingredients

  • 1.25 lb chicken breast
  • 1 cup chicken broth
  • 3 chipotle peppers in adobo sauce
  • 1 tbsp adobo sauce
  • 2 corn tortillas
  • 1/4 cup refried beans
  • 1/4 cup shredded iceberg lettuce
  • 1 tbsp cilantro
  • 1 tbsp cojita cheese
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/2 tsp dried oregano
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Notes

Spicy Crockpot Chicken will make enough to have for the week! Use desired amount on top of tostada.
