The blueberry lemon flavors are great for the summertime and make for a refreshing flavor to cool off with. The best part about chia pudding is it takes less than 10 minutes to make and made with simple ingredients that you may already have at home.
What you need for Blueberry Lemon Chia Pudding:
- Frozen blueberries
- Chia Seeds
- Unsweetened Vanilla Almond milk
- Lemon juice
- Lemon zest
- Maple Syrup
- Cinnamon
- Vanilla extract
- Creamy vanilla yogurt
How to make chia pudding:
- Start by combining frozen blueberries, almond milk, lemon, lemon zest, maple syrup, vanilla extract and cinnamon in a blender. Blend to combine.
- Pour into a jar with chia seeds.
- Mix to combine.
- Place in the fridge for 20-30 minutes before mixing again.
- Leave in the fridge overnight.
- In the morning, top with vanilla yogurt and mix.
- Enjoy!

This Blueberry Lemon Chia Pudding makes for an easy breakfast that's great to meal prep! Made with just a few simple ingredients.
Ingredients
- 1/4 cup chia seeds
- 1 cup frozen blueberries
- 1 cup unsweetened vanilla almond milk
- 1/2 lemon, juiced
- 1/2 lemon, zest
- 1/4 tsp vanilla extract
- 1/4 tsp cinnamon
- optional: 1 tbsp maple syrup
- 1 tbsp vanilla yogurt
Instructions
- In a blender, combine blueberries, almond milk, maple syrup, vanilla extract, cinnamon and lemon juice/zest. Blend to combine.
- In a jar, add chia seeds. Pour blended mix on top.
