I love a good pasta salad and this Italian Grinder Pasta Salad may be a new favorite over here! It’s loaded with all the flavor and so simple to make too! Add this to your next summer cookout side.

Italian Grinder Pasta Salad

There’s something about the summertime that makes me crave all of the pasta salad. Not only are they so simple to make, but typically a crowd favorite for a summer cookout. There’s also so many ways to switch them up! If you haven’t already tried one of my favorites, this Street Corn Inspired Pasta Salad, that’s a must make too!

This Italian Grinder Pasta Salad has all the Italian flavors but in a delicious pasta salad. Does it get any better?!

What you need to make Italian Grinder Pasta Salad:

  • Farfarlle pasta
  • Salami
  • Mozzarella balls
  • Red onion
  • Banana Peppers
  • Roasted Red Peppers
  • Romaine lettuce
  • Tomatoes
  • Pepperoni
  • Chickpeas
  • Parmesan Cheese

What you need for the dressing:

  • Extra Virgin Olive Oil 
  • Lemons
  • Red wine vinegar
  • Garlic cloves
  • Pepperoncini juice
  • Honey
  • Sea Salt
  • Oregano
  • Black Pepper

How to make this salad:

  1. Cook pasta according to package. Be sure to cook to al dente. 
  2. Strain and lightly rinse with water to cool
  3. In a large bowl, combine all ingredients. 
  4. In a small container, mix together dressing ingredients. 
  5. Pour dressing on top of large bowl and mix to combine. 
  6. Serve and enjoy!

How to store your leftover salad:

It’s best to store any leftovers in a sealed container in the fridge! I like using these for easy fridge storage.

If you want to switch it up, try doing this instead:

Use any pasta shape that you like!

Try it with chickpea or gluten free pasta

This Italian Grinder Pasta Salad is perfect to make for a summer cookout or meal prep for easy lunches! Packed with so much flavor.

Ingredients

  • 1lb pasta Rummo Farfarlle
  • ½ cup Salami, thinly sliced
  • 8oz Mozzarella balls
  • ½ cup Red onion
  • ½ cup Banana Peppers
  • ½ cup Roasted Red Peppers
  • 1 cup Romaine lettuce
  • ½ cup Tomatoes
  • ½ cup Pepperoni, thinly sliced
  • ½ cup Chickpeas
  • ½ cup Parmesan Cheese
  • For the dressing:
  • ½ cup Olive Oil
  • Juice of 2 Lemons
  • 2 tbsp Red wine vinegar
  • 3 Garlic cloves
  • 2 tbsp Pepperoncini juice
  • 1 tsp honey
  • 1 tsp Sea Salt
  • 1 tsp Oregano
  • ½ tsp Black Pepper

Instructions
