Ground Beef Enchiladas

Ground Beef Enchiladas

Are you needing a new easy, weeknight dinner? I have you covered with these Ground Beef Enchiladas! Not only are they so simple to make but they are packed with flavor too. Plus, they use many pantry ingredients that you may already have on hand. This meal is perfect if you’re making something for the whole family or great to reheat the next day for leftovers too.

It’s easy to switch these up with whatever you like too! Want to use ground turkey instead? Go for it! Want to do black beans instead of refried? You can do that as well! I can guarantee that everyone will love these and even want more.

What you need for Ground Beef Enchiladas

  • Ground Beef
  • Wheat/Corn Tortillas
  • Refried Beans
  • Shredded Mexican Cheese
  • Beef Broth
  • Red Enchilada Sauce
  • Yellow onion
  • Avocado oil
  • Garlic cloves
  • Chili powder
  • Paprika
  • Garlic Powder
  • Cumin
  • Sea Salt
  • Black Pepper
  • Cayenne Powder

Optional toppings for your enchiladas:

  • Pickled onions
  • Green Onion
  • Cilantro
  • Jalapeño

How to make these enchiladas:

  1. In a pan, add olive oil to heat up.
  2. Add minced garlic cloves and diced yellow onion to saute.
  3. Add ground beef to brown.
  4. Mix in beef broth and seasonings. Mix to coat and let broth soak into the ground beef.
  5. Heat up refried beans on stove to warm.
  6. Microwave tortillas to warm for 10 seconds.
  7. Preheat oven to 375 degrees.
  8. In a tortilla, add refried beans, ground turkey and shredded mexican cheese. Tightly roll up. Do this for all six tortillas.
  9. Add ½ cup enchilada sauce to the bottom of your casserole dish.
  10. Add your enchiladas. Pour remaining enchilada sauce on top to coat. Top with shredded mexican cheese.
  11. Place in the oven to bake for 20-25 minutes.
  12. Remove from the oven and top with fresh green onion, cilantro pickled onions and jalapeño.
  13. Enjoy!

How to store your enchiladas:

It’s best to store your leftovers in a sealed container in the fridge. I like using these!

If you want to pair these, try doing this:

  • Add a side salad with your enchiladas!
  • Top with sour cream or plain greek yogurt for a creamy topping

Can I use ground turkey?

Yes! If you want to sub the ground beef for ground turkey, you can!

Are these good to meal prep?

While these do make for great leftovers the next day, I wouldn’t meal prep these to have for multiple nights during the week. If you wanted to save yourself some time, you could prep the ground beef ahead of time.

How do I make pickled onions?

Pickled onions add the best flavor to everything, but especially to this burger bowl! Start by chopping up the red onion in half and then into some thin “C” slices. Set aside to make the brine. Take 6oz of water and set to a boil on the stove. Put in 1 tbsp salt with 1 tbsp white sugar into the mason jar with red onion. Pour in the boiled water and then fill the rest of the jar with white vinegar. Place lid on mason jar and give it a spin to let onions soak it up. Store in the fridge for the week!

  • 1lb ground beef
  • 1 yellow onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 6 wheat/corn tortillas
  • 1/2 cup beef broth
  • 1 can refried beans
  • 12oz red enchilada sauce
  • 1 1/2 cups shredded mexican cheese
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • 1/2 tsp sea salt
  • dash of black pepper
  • dash of cayenne
  • optional toppings: green onion, cilantro, pickled onions, jalapeno

Instructions
