Ground Beef and Rice Skillet

If you want a new easy dinner, this Ground Beef and Rice Skillet is for you! This meal comes together in one pan, made with simple ingredients and takes less than 30 minutes to make for a delicious weeknight dinner.

Ground Beef and Rice Skillet

I can easily get in a rut when it comes to dinner time recipes! During the week, I want something that is easy and doesn’t require many ingredients. Even better if it all comes together in one pan. It really doesn’t get any better than the flavors here that make up this hearty meal. This Ground Beef and Rice Skillet uses many pantry ingredients that you may already have! I like to use my Butcher Box Grass-fed Ground Beef which honestly makes it taste even better!

What you need for this Ground Beef and Rice Skillet:

  • Grass-fed Ground Beef
  • Yellow onion
  • Garlic cloves
  • Black Beans
  • Corn
  • Green chiles
  • Beef Broth
  • Jasmine Rice
  • Chunky Salsa
  • Shredded Cheddar Cheese
  • Taco Seasoning
  • Olive Oil
  • Sea salt

How to make this skillet:

  1. Start by sauteing your minced garlic and onion in a large pan with olive oil.
  2. Once sauteed, add the ground beef to brown.
  3. Add taco seasoning to mix.
  4. Rinse and drain your black beans and corn. Add to the pan with green chiles, beef broth, salsa and rice.
  5. Mix to combine. Add sea salt
  6. Bring to a boil.
  7. Reduce to a simmer and cover with a lid to allow the rice to cook through. Occasionally stir. This should take around 8-9 minutes for the rice to fully cook.
  8. Once the broth has soaked up and rice has cooked through, taste and adjust seasonings accordingly. Add more salt if you’d like!
  9. Top with shredded cheddar cheese and cilantro.
  10. Serve and enjoy!

How to store your leftovers:

It’s best to store your leftovers in a sealed container! I like using these for a variety of sizes. If you’ll be packing up the leftovers for work lunch, these are great containers to take with you! I recommend heating up the leftovers in the microwave for a minute to minute half until warm.

If you want to switch up this skillet, try doing this:

  • Top your beef and rice skillet with plain greek yogurt or sour cream to add a creaminess to it!
  • Serve it with your favorite tortilla chips. I like using these!

This will last in the fridge for up to 4 days! You can also freeze this meal to reheat at another time.

Can I use any rice?

Yes! You can use brown rice here if you’d like. I like using jasmine!

This Ground Beef and Rice Skillet is perfect for an easy weeknight dinner and made all in one pan! It comes together in less 30 minutes and uses many pantry ingredients.

Ingredients

  • 1lb ground beef
  • 1 small yellow onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 3 tbsp taco seasoning
  • 1 tsp sea salt
  • 1 can black beans, rinsed and drained
  • 1/2 can corn, rinsed and drained
  • 1 can green chiles
  • 1 1/2 cup beef broth
  • 1 cup jasmine rice
  • 12oz chunky mild salsa
  • 1/3 cup shredded cheddar cheese
  • optional: fresh cilantro

Instructions

  1. Start by sauteing your minced garlic and onion in a large pan with 1 tbsp olive oil.
  2. Once sauteed, add the ground beef to brown.
  3. Add 3 tbsp taco seasoning to mix.
  4. Rinse and drain your black beans and corn. Add to the pan with green chiles, beef broth, salsa, rice and sea salt.
  5. Mix to combine.
  6. Bring pan to a boil.
  7. Reduce to a simmer and cover with a lid to allow the rice to cook through. Occasionally stir. This should take around 9-10 minutes for the rice to fully cook.

Notes

This recipe makes alot! It will leave you with a lot of leftovers or it's perfect if you're serving for 4+ people.
