Ground Beef and Rice Skillet

If you want a new easy dinner, this Ground Beef and Rice Skillet is for you! This meal comes together in one pan, made with simple ingredients and takes less than 30 minutes to make for a delicious weeknight dinner.

Ground Beef and Rice Skillet

I can easily get in a rut when it comes to dinner time recipes! During the week, I want something that is easy and doesn’t require many ingredients. Even better if it all comes together in one pan. It really doesn’t get any better than the flavors here that make up this hearty meal. This Ground Beef and Rice Skillet uses many pantry ingredients that you may already have! I like to use my Butcher Box Grass-fed Ground Beef which honestly makes it taste even better!

What you need for this Ground Beef and Rice Skillet:

  • Ground Beef
  • Yellow onion
  • Garlic cloves
  • Black Beans
  • Corn
  • Green chiles
  • Beef Broth
  • Organic White Rice
  • Medium Salsa
  • Shredded Mexican Cheese
  • Taco Seasoning
  • Cilantro
  • Olive Oil
  • Sea salt

How to make this skillet:

  1. Start by sauteing your minced garlic and onion in a large pan with olive oil.
  2. Once sauteed, add the ground beef to brown.
  3. Add taco seasoning and sea salt to mix with beef broth.
  4. Rinse and drain your black beans and corn. Add to the pan with green chiles, salsa and rice.
  5. Mix to combine.
  6. Bring to a boil for 1-2 minutes.
  7. Reduce to a simmer and cover with a lid to allow the rice to cook through. Occasionally stir. This should take around 15-20 minutes for the rice to fully cook. Be sure to taste the rice to make sure it has fully cooked before removing from the heat, you may need to add an additional 4-5 minutes.
  8. Top with shredded Mexican cheese and cilantro.
  9. Serve and enjoy!

How to store your leftovers:

It’s best to store your leftovers in a sealed container! I like using these for a variety of sizes. If you’ll be packing up the leftovers for work lunch, these are great containers to take with you! I recommend heating up the leftovers in the microwave for a minute to minute half until warm.

If you want to switch up this skillet, try doing this:

  • Top your beef and rice skillet with plain greek yogurt or sour cream to add a creaminess to it!
  • Serve it with your favorite tortilla chips. I like using these!

How long does this last for?

This will last in the fridge for up to 5days! You can also freeze this meal to reheat at another time.

Can I use any rice?

It is important to grab a quicker cooking rice as the times can vary for each one. I used an organic white rice which takes about 15-20 minutes to cook in a one pan meal. If you decide to use another rice, cooking times will vary.

This Ground Beef and Rice Skillet is perfect for an easy weeknight dinner and made all in one pan! It comes together in less 30 minutes and uses many pantry ingredients.

Ingredients

  • 1lb ground beef
  • 1 cup yellow onion, diced
  • 3 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 pkg (1.31oz) taco seasoning
  • 1/2 tsp sea salt
  • 1 can black beans, rinsed and drained
  • 1/2 cup roasted corn
  • 1 can (4oz) mild green chiles
  • 1 1/2 cup beef broth
  • 1 cup organic white rice
  • 1 cup chunky mild/medium salsa
  • 1 cup shredded Mexican cheese
  • optional: fresh cilantro

Instructions

  1. Start by sauteing your minced garlic and onion in a large pan with olive oil.

Notes

This recipe makes alot! It will leave you with a lot of leftovers or it's perfect if you're serving for 4+ people.

Be sure to check the rice that you're using as all have various cooking times. This should take no longer than 15-20 minutes to cook.
