One Pot Veggie Pasta

It doesn’t get much better than a meal that comes together in one pot. This One Pot Veggie Pasta is so simple to make and loaded with veggies! The best part, you can switch this up with whatever veggies you have around. This meal is made with simple ingredients, requires only one pot and perfect for an easy weeknight dinner.

One Pot Veggie Pasta

There’s always a day during the week when you’re trying to figure out what to make for dinner and can’t think of anything. If you’re like me you like minimal clean up, simple ingredients and easy. That’s exactly why I created this One Pot Veggie Pasta. It’s loaded with veggies that will make you feel good and all made in one pot, so the clean up is minimal. While I did load this up with zucchini, broccoli, and bell pepper, you can switch up the veggies that you use with whatever you have around. Want to add in mushrooms or spinach? Great, toss them in!

If you want to make this a completely meatless meal, omit the chicken sausage and add more veggies! This One Pot Veggie Pasta can easily be made into a meal perfect for a plant-based diet.

What you need for One Pot Veggie Pasta:

  • 1 lb Pasta Rummo Maxima, Farfalle
  • Yellow squash, chopped into pieces
  • Zucchini, chopped into pieces
  • Mushrooms, chopped
  • Yellow onion, diced
  • Garlic cloves, minced
  • Spinach
  • Water
  • Marinara sauce
  • Oregano
  • Dried Basilย 
  • Salt
  • Garlic powder
  • Shredded or grated parmesan cheese
  • Extra virgin olive oil

How to make your one pot pasta:

  1. In a large pot, add olive oil. Add in minced garlic and yellow onion and saute on medium heat for 3-4 minutes.ย 
  2. Add in zucchini, squash and mushrooms and saute for 2 minutes. Add in spices.ย 
  3. Pour in marinara sauce, water and pasta.ย 
  4. Bring to a boil for 2 minutes.ย 
  5. Reduce heat to a simmer, add lid and set timer for 12-15 minutes. Continue to stir throughout.ย 
  6. Remove pot from the heat and add shredded parmesan cheese and spinach to wilt. Mix in with pasta.ย 
  7. Serve and enjoy!

How to store your leftover pasta:

It’s best to store any leftovers in a sealed container in the fridge! I like using these!

If you want to switch it up, try doing this instead:

  • Add chicken sausages for more protein!
  • Switch up the veggies by adding in peas or broccoli
  • Leave out the cheese to make it completely dairy free!

FAQs:

Can I use any pasta shell?

Yes! I used a penne pasta here but any shape would work. I just recommend keeping it at 12oz for this recipe.

What pasta sauce did you use?

I used a store bought Tomato Basil Marinara! You can use any that you prefer.

Can I make this dairy free?

Yes! You can easily leave the grated parmesan cheese in this pasta to make it dairy free.

Can I add more protein to this?

Yes! I love adding in chicken sausages too.

Ingredients
