Jalapeno Popper Tuna Salad

I’m always looking for ways to switch up my lunch during the week while keeping it easy! I love having meals that are ready in the fridge so I can easily pull them out to make into a meal during the week. For example, I’ll prep the Jalapeno Tuna Salad and then the day that I want to enjoy it, i’ll pull it out to top on toasted sourdough bread! It’s so delicious.

While this isn’t exactly a jalapeno popper, you’re still getting alot of the flavors and the deliciousness that goes into one! Hello crispy bacon, cheddar cheese and jalapeno. The flavors really add a lot to what (some may say is boring) tuna. The best part about tuna salad for lunch is it makes for a protein packed meal that will leave you feeling satisfied after.

What you need for Jalapeno Popper Tuna Salad:

  • Canned Tuna (I like using this one!)
  • Jalapeno
  • Plain Greek Yogurt
  • Mayo
  • Bacon
  • Shredded Monterey Jack with Jalapeno Peppers & Mild Cheddar Cheese
  • Green Onion
  • Apple Cider Vinegar
  • Sea Salt
  • Black Pepper
  • Garlic Powder

How to make this tuna salad:

  1. Start by finely chopping the green onion and jalapeno.
  2. Cook bacon according to package. Chop into small pieces.
  3. In a bowl, add tuna. Add in jalapeno, green onion, bacon and shredded cheese.
  4. In a small bowl, mix together mayo, greek yogurt and seasonings. Add to tuna.
  5. Mix to combine.
  6. Adjust seasonings if needed!
  7. Top on toast or however you want to enjoy!

How long will this last in the fridge?

This tuna salad will last in the fridge for up to 3-4 days and remain fresh.

How does this compare to a jalapeno popper?

While this isn’t exactly like a jalapeno popper, it does give you a bit of the flavor and combinations of one. Typically, a jalapeno popper will use cream cheese but to make this healthier, I did a mix of mayo and greek yogurt. I still added the delicious flavors of jalapeno, bacon and green onion in here too.

Jalapeno Popper Tuna Salad

This Jalapeno Popper Tuna Salad is packed with flavor and perfect to meal prep for an easy lunch during the week. This protein packed meal will leave you feeling good and satisfied.

Ingredients

  • 2 cans tuna
  • 1 1/2 jalapeno, deseeded & finely chopped
  • 1/4 cup bacon, diced
  • 3 tbsp green onion, finely chopped
  • 1/3 cup shredded Monterey jack with jalapeno peppers and mild cheddar cheese (or shredded cheddar cheese)
  • 1/4 cup (+ 1 tbsp) avocado oil mayo
  • 2 tbsp plain greek yogurt
  • 1 tsp apple cider vinegar
  • 1 tsp garlic powder
  • 1/4 tsp sea salt
  • dash of pepper
  • optional: additional jalapeno and green onion to top

Instructions

  1. Finely dice the jalapeno and green onion.
  2. Cook bacon according to package. Chop into small pieces.
  3. In a bowl, add canned tuna, jalapeno, green onion, bacon and shredded cheese.
  4. In a small bowl, add mayo, greek yogurt and seasonings. Mix to combine.
  5. Pour into bowl with tuna and mix to combine. Adjust seasonings if needed.
  6. Top on toast or however you like! Add additional jalapeno and green onion.

Notes

I used the monterey jack with jalapeno peppers and mild cheddar cheese but you can also use a shredded cheddar cheese.
