Grilled Chicken Pitas
If you want a new easy lunch or weeknight dinner, these Grilled Chicken Pitas are for you. Not only are they so delicious, but they are so easy to meal prep so you can throw together a meal quickly during the week.
I love finding ways to switch up my lunch throughout the week and these Grilled Chicken Pitas have become a recent favorite of mine. Not only are they so simple to meal prep for the week, but they are made with a few simple ingredients too. I love that you can switch up the ingredients to make into a bowl or salad if you don’t want to do a pita either!
What you need for Grilled Chicken Pitas:
- Thin sliced chicken breast
- Pita bread
- Arugula
- Crumbled Feta Cheesse
- Tomato
- Plain Greek yogurt
- Olive oil
- Red Wine Vinegar
- Oregano
- Parsley
- Sea Salt
- Black Pepper
What you need for tzatzki:
- Plain Greek Yogurt
- Cucumber
- Mayo
- Extra Virgin Olive Oil
- Lemon
- Garlic clove
- Sea salt
- Black Pepper
How to make chicken pitas:
Start by preparing your marinade for the chicken. You want to marinade the chicken for at least 4hrs or overnight.
In a bag, add your chicken with plain greek yogurt, olive oil, red wine vinegar, lemon juice and seasonings. Mix to thoroughly coat on the chicken. Place in the fridge.
Make your tzatziki by combining all ingredients into a jar and mix. Set aside.
Prepare pickled onions by combining ingredients and set aside. These are best to prepare 4+ hrs before enjoying them or overnight.
In a heated grill pan, cook the chicken until cooked through. I like to use my thermometer to make sure the chicken is cooked thoroughly.
How to make pickled onions:
Pickled onions add the best flavor to everything, but especially to this burger bowl! Start by chopping up the red onion in half and then into some thin “C” slices. Set aside to make the brine. Take 6oz of water and set to a boil on the stove. Put in 1 tbsp salt with 1 tbsp white sugar into the mason jar with red onion. Pour in the boiled water and then fill the rest of the jar with white vinegar. Place lid on mason jar and give it a spin to let onions soak it up. Store in the fridge for the week!
How to store your leftover ingredients:
It’s best to store any of your leftover ingredients in a sealed container in the fridge! I like using these for easy storage. I love these bowls for prepping and storing the pickled onions too.
If you want to switch up these pitas, try these options:
- Make it into a bowl! Add brown rice or a grain of your choice.
- Use chickpeas or tofu to make this plant-based.
- Add hummus or your favorite spread.

Can I meal prep any of these ingredients?
Yes! Many of these ingredients are great to meal prep. I like to prep the tzatziki, pickled onions and grilled chicken at the beginning of the week and then you can assemble these throughout the week.
Do I have to use pita?
I love topping these on pita bread but you can also put this into your favorite wrap or into a big bowl if you’d like!

Ingredients
- for the chicken marinade:
- 1lb thin sliced chicken breast
- 2 tbsp plain greek yogurt
- 1 tbsp red wine vinegar
- 1 lemon, juiced
- 1/4 cup olive oil
- 1 tsp oregano
- 1 tsp parsley
- 1/2 tsp sea salt
- dash of pepper
- for the tzatziki:
- 1/3 cup cucumber, thinly diced
- 1/2 cup plain greek yogurt
- 2 tbsp olive oil
- 1 lemon, juiced
- 1 garlic clove, minced
- 1 tbsp mayo
- 1/4 tsp sea salt
- dash of pepper
- for the pitas:
- 2 pitas
- 1/2 cup arugula
- 1/2 cup tomatoes, chopped
- 1 tbsp parsley
- 2 tbsp feta cheese
- 1/4 cup pickled onions
Instructions
- Prepare chicken marinade by combining all ingredients into a bag to mix together. Place in the fridge for 4+ hrs or overnight.
- Prepare tzatziki by combining all ingredients in a bowl or jar and mix. Adjust seasonings to taste. Set aside.
- Prepare pickled onions day before.
- Heat up chicken on grill pan with olive oil. Cook throughly until done.
- Assemble your pitas by topping with tzatziki, arugula, grilled chicken, pickled onions, tomatoes, feta cheese and fresh parsley.
- Enjoy!
Notes
Pickled onions will make enough to have for the week!
Tzatziki will make enough to have for more than 2 pitas.
You will have grilled chicken leftover too.
