One Pan Taco Orzo

I love a good one pan meal for an easy weeknight dinner and this One Pan Taco Orzo combines all of my favorite things into one dish! Who doesn’t love all the flavors of a taco into a dish that comes together in one pan!?

One Pan Taco Orzo

Do you ever get sick of the regular meals for dinner? I know I’m always looking for ways to switch it up while still keeping it simple, delicious and made with a few ingredients. Bonus when it includes a lot of ingredients that I already have on hand! This taco orzo was inspired by a few of my favorite meals: tacos and one pan meals! I love orzo dishes because they also make for great leftovers the next day too. It can easily be reheated in the microwave or on the stovetop for an easy meal.

What you need for One Pan Taco Orzo:

  • Orzo
  • Ground Beef
  • Yellow onion
  • Garlic cloves
  • Taco Seasoning
  • Beef broth
  • Canned Green Chiles
  • Canned Petite Tomatoes
  • Roasted corn
  • Black beans
  • Shredded Mexican Cheese
  • Cojita Cheese
  • Sea Salt
  • Extra Virgin Olive Oil

How to make this one pan meal:

  1. Start by heating up your pan with extra virgin olive oil and sautéing your garlic and onion.
  2. Add the ground beef to brown.
  3. Pour in the packet of taco seasoning and mix to combine. Add sea salt.
  4. Add black beans, tomatoes, roasted corn, green chiles, orzo and broth. Mix and bring to a boil for 1-2 minutes.
  5. Set to simmer and put timer at 7 minutes. Put lid on top. Mix around half way through.
  6. Once timer is up, check to ensure orzo has cooked through. You may want to add an additional minute or two!
  7. Remove from the heat and top with shredded cheese. Place lid on top to allow the cheese to get melty for 2-3 minutes.
  8. Top with cilantro and grated cotija cheese.
  9. Serve and enjoy!

How to store your leftovers:

It’s best to store any leftovers in a sealed container in the fridge. I like using these for easy fridge storage!

If you want to switch it up, try doing this instead:

  • Use ground turkey or ground chicken
  • Switch up with any cheese you prefer!

Can I meal prep this?

Yes! This can easily be prepped ahead of time and then reheated throughout the week. It will stay good for up to 4 days in the fridge.

Do I have to use ground beef?

No! You can also sub for ground turkey or chicken.

This One Pan Taco Orzo is packed with flavor and perfect to make for an easy weeknight dinner!

Ingredients

  • 1lb ground beef
  • 1 cup yellow onion, diced
  • 3/4 cup shredded mexican cheese
  • 3 tbsp cotija cheese
  • 3 garlic cloves, minced
  • 1 1/2 cups beef broth
  • 1 cup orzo, dry
  • 1 can (4oz) diced green chiles
  • 1 can (14.5oz) petite diced tomatoes
  • 1/2 cup roasted corn
  • 1/2 cup black beans, rinsed & drained
  • 2 tbsp cilantro
  • 1 pkg (1oz) mild taco seasoning
  • 1/2 tsp sea salt
  • 1 tbsp extra virgin olive oil

Instructions
