What you need for blackened shrimp:
- Raw Shrimp, Deveined and Tails Removed
- Avocado Oil
- Paprika
- Chili Powder
- Brown sugar
- Onion Powder
- Garlic Powder
- Cayenne Pepper
- Cumin

- Black Pepper
What you need for street corn:
- Roasted Corn
- Jalapeno
- Cilantro
- Red Onion
- Mayo
- Cotija Cheese
- Plain Greek yogurt
- Lime
- Cumin
- Smoked Paprika
- Garlic powder
- Chili Powder
- Sea Salt
- Black Pepper
How to make this Shrimp Rice Bowl:
- In a small bowl, mix shrimp with seasonings to coat.
- On a heated and seasoned cast iron, add shrimp to cook until pink and set aside once done.
- In a medium bowl, combine ingredients for street corn and mix to combine. Set aside.
- Prepare jasmine rice according to package.
- Assemble bowls with jasmine rice, sauteed shrimp and street corn topping. Add avocadao, cilantro and grated cotija cheese on top. Enjoy!

- 1 lb. raw shrimp, deveined and tails removed
- ยฝโ1 tablespoon oil (avocado, olive, or vegetable oil)
- 1 tablespoon paprika
- ยฝ tablespoon (1ยฝ teaspoons) chili powder
- 1ยผ teaspoons brown sugar
- 1 teaspoon onion powder
- ยพ teaspoon garlic powder
- ยฝ teaspoon cayenne pepper (optional)
- ยฝ teaspoon cumin
- ยฝ teaspoon salt
- ยฝ teaspoon black pepper
- for the street corn:
- 1 cup roasted corn
- 1 jalapeno, finely diced
- 1 tsp hot sauce
- 3 tbsp red onion, finely diced
- 3 tbsp cotija cheese
- 2 tbsp cilantro
- 1/2 lime, juiced
- 3 tbsp mayo
- 2 tbsp plain greek yogurt
- 1/4 tsp cumin
- 1/2 tsp smoked paprika
- 1/4 tsp sea salt
- for the bowls:
- 1/2 cup jasmine rice
- 1/4 avocado
- 1 tbsp cilantro
- 1/4 cup street corn
- optional: grated cotija on top
Instructions
