It really doesn’t get any better than a meal that comes together on one sheet pan and this Sheet Pan Summer corn & Gnocchi will be on repeat around here. It’s loaded with veggies, packed with flavor and comes together in less than 30 minutes. This will quickly become a weeknight staple!

Sheet Pan Summer Corn & Gnocchi

This Sheet Pan Summer Corn & Gnocchi is the kind of dinner you’ll want to make on repeat all season long. It’s packed with juicy chicken sausage, pillowy gnocchi, sweet summer corn, and colorful vegetables, all roasted together on one pan for an easy meal that’s full of fresh flavor. Finished with creamy goat cheese, fresh basil, and a squeeze of lemon, every bite is the perfect balance of savory, bright, and satisfying.

One-pan meals are some of my favorite recipes to make, especially during busy weeks when I want something delicious without spending hours in the kitchen. Everything cooks together on one sheet pan, which means less prep, minimal cleanup, and plenty of leftovers for lunches throughout the week. Whether you’re using fresh corn from the farmers market or frozen corn you already have on hand, this recipe is a simple way to make the most of summer produce while getting a protein-packed meal on the table.

What you need for Sheet Pan Summer Corn & Gnocchi:

  • Potato Gnocchi
  • Chicken Apple Chicken Sausage
  • Zucchini
  • Sweet Corn
  • Red Onion
  • Red Bell Pepper
  • Extra Virgin Olive Oil
  • Garlic powder
  • Paprika
  • Sea Salt
  • Black Pepper
  • Crumbled Goat Cheese
  • Hot Honey
  • Fresh Basil

How to make this Sheet Pan meal:

  1. Preheat oven to 425 degrees.
  2. Chop up all veggies. Be sure they are similar in size so that everything will cook the same. Chop up chicken sausages.
  3. On a large sheetpan, lay out veggies, chicken sausage and gnocchi. Top with olive oil and seasonings and mix to fully combine on the sheetpan.
  4. Place in the oven to bake for 25-30 minutes. Flipping half way.
  5. Remove from the oven and allow to cool for 10 minutes before topping with fresh basil, crumbeld goat cheese and a drizzle of hot honey.
  6. Enjoy!

How to store your leftovers:

It’s best to store any leftovers in a sealed container in the fridge. I like using these!

If you want to switch it up, try doing this instead:

  • Use your favorite chicken sausage
  • Try it with cauliflower gnocchi instead
  • Switch zucchini or yellow squash or use whatever bell pepper you have on hand!
