Lemon Poppyseed Overnight Oats
Lemon poppyseed is one of my favorite combos so I figured it was about time to put it in an overnight oat flavor to share with you! This one may be a new favorite over here! It’s perfect this time of year too because it’s refreshing and it’s just enough of lemony flavor. These Lemon Poppyseed Overnight Oats come together in less than 10 minutes and are perfect for meal prep!
It’s easy to get sick of the same breakfast! That’s why I like to switch it up with different sweet and savory options like these Lemon Poppyseed Overnight Oats. One reason why I love overnight oats is how versatile they are! There are so many ways to make them and all different flavors to switch it up each week. Overnight oats can be prepped at the beginning of the week and then easily grab and go in the mornings.
What you need to make Lemon Poppyseed Overnight Oats:
- Rolled Oats
- Unsweetened Almond Milk
- Vanilla yogurt
- Lemon juice
- Lemon zest
- Poppyseeds
- Maple syrup
- Vanilla extract
- Sea salt
- Collagen peptides (optional)
How to make overnight oats:
- Add all ingredients to a jar. Mix together to combine.
- Place in the fridge overnight.
- In the morning, top with fresh blueberries, nut butter or fresh lemon zest! Option to add a little more almond milk to make it creamier too.

FAQs
How long are overnights oats good in the fridge for?
Overnight oats are best after 3-4 days of making them! Be sure to only add the toppings when you’re ready to enjoy them. If you’re storing them for a few days, it’s best they are in a sealed container.
Can I heat up my overnight oats?
Yes. If you don’t like your overnight oats cold, they can be heated up too. I recommend adding more almond milk when you go to heat them since they are already thick after sitting in the fridge overnight.
Can I make these dairy free?
Yes. If you want to make these dairy free, you can leave out the yogurt. I love adding in yogurt to overnight oats to make it extra creamy but it can be omitted to make these dairy free.

Lemon Poppyseed Overnight Oats
These lemon poppyseed overnight oats are full of flavor and make for a perfect spring breakfast. They are great to meal prep and have for an easy breakfast during the week too.
Ingredients
- 1/2 cup rolled oats
- 3/4 cup unsweetened vanilla almond milk
- 1/2 lemon, juice
- 1/2 tsp lemon zest
- 1 tsp poppyseeds
- 1 scoop collagen peptides (or protein powder)
- 1 tbsp chia seeds
- 1 tbsp vanilla yogurt
- 1/2 tbsp maple syrup
- 1/4 tsp vanilla extract
- dash of sea salt
- Toppings (optional): blueberries, lemon zest
Instructions
- Combine all ingredients into a jar and mix together.
- Store in the fridge for 4+ hrs or overnight.
- Top with blueberries, fresh lemon zest and honey.
- Enjoy!

Toppings optional. Switch it up based off what you like!
You may want to add more almond milk to mix in the morning depending on how thick or creamy you want them.
