Mango Chicken Salad

Here for all the summertime salads! This Mango Chicken Salad may just be the best mix of sweet and savory that works so so well! I know you may be a little hesitant on this one, but trust me! Add this your meal prep for a delicious, healthy lunch for the week.

Two things I can’t get enough of: fresh mango and chicken salad! So what did I do? Combined them! Let me tell you, this sweet and savory combination is so good! I was hesitant if this would work but with the mix of jalapeño and cilantro, creamy lime dressing but it is so good! This is perfect for meal prep and great to store in the fridge for the week. Once it’s prepped, serve it in a wrap, greens or with crackers for a quick and easy lunch.

What you need for Mango Chicken Salad:

  • Rotisserie Chicken
  • Mango
  • Jalapeño
  • Red onion
  • Cilantro
  • Avocado Oil Mayo
  • Plain Greek Yogurt
  • Apple Cider Vinegar
  • Honey
  • Lime
  • Cumin
  • Chili Powder
  • Garlic powder
  • Sea salt

How to make this salad:

  1. Shred rotisserie chicken.
  2. Finely chop red onion, jalapeño, cilantro and mango.
  3. Using a small bowl, mix together dressing ingredients: mayo, greek yogurt, apple cider vinegar, honey, cumin, chili powder, garlic powder, cumin and sea salt.
  4. In a large bowl, combine chicken with add-ins and pour over dressing. Mix together to combine.
  5. Enjoy!

How to store your leftovers:

It’s best to store any leftovers in a sealed container in the fridge! I like using these for easy fridge storage and if you’re packing up this salad to take with you, these are great for on the go.

If you want to switch this up, try doing this instead:

  • Try it with canned tuna instead!
  • Add more jalapeño to crank up the spice!!
  • Serve in your favorite wrap or bread!

Ingredients

  • 1.5 cups shredded rotisserie chicken
  • 1 jalapeno, finely diced
  • 1/2 cup mango, chopped
  • 1/4 cup red onion, finely diced

  • 1/4 cup + 1 tbsp mayo made with avocado oil
