Hatch Chile Chicken Salad

One of my favorite things to meal prep for the week is a good chicken salad. It’s perfect to have ready in the fridge to throw together for quick and easy meals! This Hatch Chile Chicken Salad is a new favorite, packing in so much flavor from the hatch chile plus some heat too. You’ll love having this ready for lunch and I can bet everyone in your home will enjoy it too!

What you need for Hatch Chile Chicken Salad:
- Rotisserie Chicken
- Mild Hatch chiles
- Red onion
- Roasted corn
- Cilantro
- Avocado Oil Mayo
- Plain Greek Yogurt
- Lime
- Lime zest
- Garlic Cloves
- Honey
- Sea Salt
- Black Pepper
- Cumin
- Cayenne
How to make this salad:
- Start by roasting the hatch chiles. I roast mine on the stove top flame until completely roasted. Remove the outer layer and cut the top off. I keep the seeds in to add a little extra heat.
- In a blender, add roasted hatch chiles, mayo, plain greek yogurt, lime juice, lime zest, garlic cloves, honey, sea salt, black pepper, cumin and cayenne. Blend until mixed.
- In a small bowl, add shredded chicken, roasted corn, red onion and cilantro.
- Pour dressing on top and mix to combine.
- Top on toast, serve with crackers or on greens. Enjoy!!
How to store your salad:
It’s best to store your salad in a sealed container in the fridge. I like using these for easy storage! These are also great for taking on the go.
If you want to switch this up, try doing this instead:
- Use shredded chicken instead of rotisserie chicken!
- Add canned corn instead of roasted if that’s easier
- Serve it different ways! In a wrap, on a sandwich or with crackers.
