Spinach Feta Orzo Salad

Warmer weather calls for all the light and delicious salads. This Spinach Feta Orzo Salad is so simple to make and packed with flavor! It’s perfect to make as a side dish or add protein on top to make it into a meal.

I can’t get enough of the summertime salads and this Spinach Feta Orzo is a new one that we can’t get enough of. Salads like this are my favorite because you can meal prep them for the week and serve in a few different ways so you don’t get sick of it! I love to add protein to it to make it into a meal or serve it alongside a sandwich or wrap at lunch.

What you need for Spinach Feta Orzo Salad:

  • Orzo
  • Spinach
  • Crumbled Feta
  • Roasted Peppers
  • Pine nuts
  • Red onion
  • Olive oil
  • Balsamic Vinegar
  • Shallots
  • Honey
  • Dijon mustard
  • Sea salt
  • Garlic powder
  • Black pepper

How to make this orzo:

  1. Start by cooking the orzo according to package. Drain and set aside a cup of the pasta water.
  2. Place spinach in strainer and add pasta water on top to lightly wilt.
  3. In a large bowl, add orzo with spinach, feta cheese, roasted peppers, red onion and pine nuts.
  4. In a small jar, mix together olive oil, balsamic vinegar, shallots, honey, dijon mustard, sea salt, garlic powder and black pepper. Mix to combine.
  5. Pour dressing on top of orzo. Mix to combine.
  6. Enjoy!

How to store your leftover salad:

It’s best to store any leftovers in a sealed container in the fridge. I like using these for easy fridge storage!

If you want to switch it up, try doing this instead:

  • Use sun-dried tomatoes instead of roasted peppers!
  • Add more veggies like olives or bell pepper.
  • Leave out the cheese or switch for crumbled goat cheese.
