Curry Chicken Salad

This may be a new favorite to make for the week! I love the flavors of curry and this Curry Chicken Salad is no exception! Not only is this so simple to make, but it’s perfect to have ready for quick and easy lunches during the week too. All you need are a handful of ingredients to make this one!

What you need to make Curry Chicken Salad:

  • Rotisserie Chicken (or shredded chicken)
  • Celery
  • Grapes
  • Green onion
  • Slivered Almonds
  • Plain Greek Yogurt
  • Avocado Oil Mayo
  • Lime
  • Garlic Powder
  • Curry Powder
  • Onion Powder
  • Black Pepper
  • Sea Salt

How to make this chicken salad:

  1. Start by finely chopping your celery, grapes and green onion.
  2. In a large bowl, combine shredded chicken, grapes, celery and green onion.
  3. In a small bowl, combine remaining ingredients to make the dressing.
  4. Pour on top of chicken and mix to combine.
  5. Enjoy!

This Curry Chicken Salad is perfect for an easy lunch and great to meal prep at the beginning of the week!

Ingredients

  • 3 cups shredded rotisserie chicken
  • 1/2 cup celery, finely diced
  • 1 cup grapes, chopped
  • 1/4 cup slivered almonds
  • 2 tbsp green onion
  • 1/2 cup avocado oil mayo
  • 1/4 cup plain greek yogurt
  • 3 1/2 tsp curry powder
  • 1/2 lime, juiced
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Instructions

    1. Shred rotisserie chicken.
    2. Finely chop up celery, grapes and green onion.
    3. In a large bowl combine chicken, celery, grapes, green onion and slivered almonds.
    4. In a small bowl, combine ingredients for dressing: mayo, greek yogurt, lime juice and seasonings. Mix to combine.
    5. Pour on top of chicken and mix. Adjust seasonings if needed.
    6. Enjoy!!

Notes

You can also sub the ratios and do 1/2 cup yogurt to 1/4 cup mayo.
