I’ve been loving all the shrimp recipes and this air fried coconut shrimp may be a new favorite! Plus, it’s crazy easy and who doesn’t love the air fryer!? It’s one of my favorite kitchen items and I use it ALL the time around here. I love this recipe because not only is it easy, but it has minimal ingredients with still a lot of flavor. Win-win.

I paired this with a sweet chili sauce (store bought) but there are a lot of great options for sauces to dip this shrimp in or you can top it on salads or bowls.
Recipe tip: when using shredded coconut, you want to use fine shreds of coconut, not the big pieces of coconut! I also used unsweetened coconut but if you’d like for it to be sweeter then you can use regular. If you only have big pieces of shredded coconut, you can toss it in the food processor or blender to get it into fine shreds.

What you need to make Coconut Shrimp:
- Eggs
- Fine shredded coconut (unsweetened)
- Shrimp (I love the Argentinian shrimp from Trader joes!) frozen shrimp will work just make sure to thaw before using
- Sea Salt, Garlic Powder
- Optional: cilantro, red pepper flakes for garnish
How to coat your shrimp:
- Start by making two bowls. One with eggs whisked and another with shredded coconut mixed with spices.
- Make sure to pat shrimp dry before beginning to coat.
- Dip your piece of shrimp into the egg mixture to fully coat and then roll in the coconut mix. Set aside and do the same thing for each shrimp.

Air Fried Coconut Shrimp
A delicious air fried recipe with a couple ingredients!
Ingredients
- 2 eggs, whisked
- 1 1/2 cup fine shredded coconut (unsweetened)
- 15 shrimp (I love the Argentinian shrimp from Trader joes!) frozen shrimp will work just make sure to thaw before using
- 1/2 tsp sea salt
- 1/2 tsp garlic powder
- Optional: cilantro, red pepper flakes for garnish
Instructions
- Make two bowls: whisked eggs in one and shredded coconut with spices in another.
- Make sure shrimp has thawed completely if using frozen. Pat dry with a paper towel.
- Dip shrimp in egg mixture and then roll in coconut. Set aside.
- Place in air fryer (with enough space in between each shrimp) at 350 degrees.
- Set for 12 minutes and flip the shrimp around half way through (at 6 minutes)
- Top with red pepper flakes, fresh cilantro.
- Enjoy with some sauce (sweet chili sauce pictured here!)
