These oven-roasted carrots get a delicious caramelization from the honey and garlic and a little buttery richness. They make a great side dish with chicken, steak, pork and just about anything else! The sweet combination of the honey with the creaminess of melted butter with garlic–so good! You will have everyone coming back for seconds.

Do I have to use tri-color carrots?
No! If you don’t want to use tri color carrots or don’t have any at your store, you can also use this recipe with regular carrots. I love the colors that the variety of colored carrots brings to this dish.
How to cook colored carrots?
They are cooked the same as regular carrots so no extra prep is needed when using multi-colored carrots.
How to prepare rainbow carrots?
Rainbow carrots can be prepared just as you would any dish using orange carrots. The taste will be similar when they are cooked although when eaten raw you will taste a stronger distinction between them.
Can you boil purple carrots?
Yes, they boil just like any other carrots you prep on the stove top. Just slice and boil.

How to make these honey garlic carrots:
Start by chopping up the carrots. You want the carrots to be fairly equal in size so they all will cook evenly!
Preheat the oven to 425 degrees.
In a large mixing bowl, mix carrots with avocado oil and sea salt and pepper.
Place in casserole dish and bake for 20 minutes.
While carrots are baking, prepare honey garlic butter sauce. Melt butter in pan with minced garlic cloves. Continue to whisk. Add honey and whisk. The sauce will begin to appear brown in color.
Set aside and pour on top of carrots after finished baking. Place back in the oven to bake for 40 more minutes until carrots are fork tender.

Honey Garlic Butter Roasted Carrots
These carrots make for the perfect side dish to any holiday gathering! Made with simple ingredients and a dish that everyone will love.
Ingredients
- Tri-color carrots (2 bunches)
- 4 tbsp Butter (i used a grass-fed)
- 3 cloves Minced garlic
- Fresh parsley
- 1 1/2tbsp honey
- Sea salt, pepper
- 2 tbsp Avocado oil
Instructions
- Chop up all carrots and add them to a large bowl. Add avocado oil, salt and pepper and mix.
- Preheat oven to 425 degrees.
- Place carrots evenly in casserole dish. Bake for 20 minutes.
- While carrots are cooking, prepare honey garlic butter mix on stove. Add butter and minced garlic and continually whisk. Add in honey and continue to whisk until it starts to brown.
- Pour mixture over carrots and place back in the oven for 40 minutes. Place aluminium foil on half way through and toss.
- Top with fresh parsley and serve!
